Bread that is browned by baking has acrylamide, a cancer producing substance. Crusts are the parts that are browned, so they contain more acrylamide than the middle. So if you want to minimize your exposure to acrylamide, just eat the middle.

Only if toppings have been added to the top of the loaf....like nuts n seeds n stuff. If it's the same ingredients as the rest of the bread, then the nutritive value is the same.
