This isn't my absolute favorite, but it's one of them...and it's delicious. I call it "gourmet" beanie weenies. All you need is a package of beef sausage (or the high-dollar all beef hot dogs), a large (28 oz.) can of Bush's baked beans (original or onion), a small onion, a fresh jalapeno (or a handful of the jarred kind), a small can of chopped green chile, honey mustard, regular mustard, salt, pepper, and garlic powder
First, just chop up the beef sausage into whatever sized pieces you desire and cook them over medium-high heat just to brown them. Drain off the excess grease and pour in your beans. Chop up the onion and jalapeno and add it to the mixture, along with the canned green chile. Drizzle a little of the honey mustard and regular mustar, and season with salt, pepper and garlic powder. Heat it to boiling and then turn it to low and allow all the flavors to come together. Heat for an additional 10-20 minutes and then serve with toast. mmmmmmm......yum. I love this because my dad just made it up one day and I've been making it for my friends and sharing the recipe ever since.

enchiladas, because they can be cheesy or spicy, or both, and they are always good. Especially my mom's. And you can do a lot of different things with them, like chicken, turkey, vegetarin. Green chile or red chile, you could even mix up the cheeses or the recipe for the chile. They are just sooo good.

Langoustines with garlic butter. I just love breaking them open and eating them with my fingers and getting the garlic butter dripping down my chin. A close second is a really juicy watermelon, to slurp it and make a proper pig of myself and feel those lovely aromatic juices running down my face.
