Easiest is to get a Sara Lee pound cake in the freezer section of the store. Slice it into slices about one inch thick and place on plate. Top with fresh or frozen strawberries that have been slightly sweetened, then top that with either vanilla ice cream or whipped topping. YUM. So easy and so quick and so good!

Blueberries n' Cheese Squares

"A delicious and creamy no-bake blueberry dessert. It's easy to make and has a beautiful presentation."
INGREDIENTS:
2 cups graham cracker crumbs
1/2 cup butter, melted
1 (8 ounce) package cream cheese
1/4 cup milk
2 tablespoons confectioners' sugar
1 (21 ounce) can blueberry pie filling
1 cup heavy whipping cream
3 tablespoons white sugar
1 teaspoon vanilla extract
DIRECTIONS:
1. In a small bowl, stir together the graham cracker crumbs and butter. Set aside 1/2 cup for topping, and press the rest of the crumbs into the bottom of a 7x11 inch baking pan. Set aside to chill in the refrigerator.
2. In a small bowl, beat the cream cheese, sugar and milk until smooth. Spread evenly over the chilled crumb layer. Spread the pie filling over the cream cheese layer, and chill while preparing the whipped cream. In a chilled bowl, whip the heavy cream, sugar and vanilla until stiff, spread over the top of the blueberry layer. Sprinkle the top with the remaining graham cracker crumb mixture and keep chilled until serving time.

prep time: 5 minutes plus chilling time

INGREDIENTS
* 1 can (300 mL) Regular or Low Fat Eagle Brand®
* 1⁄2 cup (125 mL) lime juice
* Green food colouring, optional
* 1 cup (250 mL) whipping cream, whipped
* 1 9-inch (23 cm) graham cracker crumb pie crust, prepared
INSTRUCTIONS
* Combine Eagle Brand, lime juice and food colouring if desired. Fold in whipped cream. Pour into prepared crust.
* Chill 3 hours or until set. Garnish as desired
Lemon Cream Pie: Substitute 1/2 cup (125 mL) lemon juice for the lime juice and yellow food colouring, if using, for green.

No Bake Chocolate Oatmeal Cookies

Amount Measure Ingredient -- Preparation Method

2 c. sugar
2 Tbsp. cocoa
1/2 c. milk
1/2 c. butter or margarine
1/2 c. peanut butter
2 c. uncooked rolled oats
1 tsp. vanilla
Put 2 cups of sugar in a boiler; add 2 tablespoons of cocoa. Stir. Add 1/2
cup of milk. Add 1/2 cup of butter or margarine. Stir. Put the boiler on
the stove. Turn heat to low; cook until it starts to boil. Stir as it
cooks. Boil about 2 minutes; remove from stove. Add 1/3 cup of peant
butter; add 2 cups of rolled oats. Stir until well mixed. Add 1 teaspoon
of vanilla; let cool. Drop on plate by spoon and refrigerate.
Makes 3 to 4 dozen cookies.
I make these all the time for my children. Since you do not have to bake
these, low fat or fat free butter can be used. Just watch closely on the
stove. You may also use skim milk. It will help reduce the fat in the
cookies. Hope you enjoy!!!!

Here it is. This cake is not only easy it is delicious.
Banana Split Cake
1st Layer
2 c. graham cracker crumbs
½ c. margarine
Make into crust and press into a 9” x 9” cake pan.
2nd Layer
2 eggs
2 c. powdered sugar
½ c. margarine
Cook to pudding stage. Pour over crust.
3rd Layer
6 bananas, split and sliced
Cover pudding completely.
4th Layer
2 c. crushed pineapple, drained
Cover over bananas completely.
5th Layer
1 large container Cool Whip
Cover cake completely.
6th Layer
Garnish with maraschino cherries and nuts. Serve immediately. This cake does not store well. You have to eat the whole thing.

Chocolate Strawberry Delight
Ingredients:
24 chocolate-flavored graham cracker squares (2 1/2 inches each),
approximately 2 cups chopped
1/2 cup butter or margarine, melted
1/4 cup sugar
1 container (12 ounces) frozen whipped topping, thawed
1 package (3.9 ounces) chocolate instant pudding and pie filling
1 cup sour cream
1 pint strawberries, hulled and sliced
1 ounce semi-sweet chocolate, melted
2 teaspoons butter or margarine, melted
Semi-sweet chocolate, grated (optional)
Directions:
1. Finely chop graham crackers with Food Chopper. Combine graham cracker crumbs, butter and sugar in Small Batter Bowl. Press into bottom and partially up sides of Springform Pan fitted with flat bottom.
2. Combine whipped topping, pudding mix and sour cream in Classic Batter Bowl with Stainless Steel Whisk. Pour half of filling over crust. Hull strawberries; slice with Egg Slicer Plus®. Layer strawberries on top of filling; pour remaining filling over strawberries.
3. Melt chocolate and butter together 1 minute 30 seconds on HIGH in Small Micro-Cooker®; stir until smooth. Drizzle over top using V-Shaped Cutter. Grate additional chocolate over the top with Deluxe Cheese Grater. Filling will set immediately, but can be refrigerated to chill.
Yield: 12 servings

Don't add the marshmallows to the batter. Bake the cookies, remove from the oven, then add the marshmallows on top so they only melt a little, forming a layer of marshmallow on top. Honestly, when you say "Smores" I think of something with very distinct layers of cookie/graham cracker, marshmallow and chocolate.

Strawberry Angel Food Cake
1 storebought Angel Food cake, torn into bite sized pieces
1 (8oz.) package no fat cream cheese, softened
1 (12 oz.) container light whipped cream
2/3 cup powdered sugar
2 lbs. fresh strawberries, sliced
With electric mixer, mix together the cream cheese, whipped cream and powdered sugar.
In a large clear glass bowl, layer half of the cake, spread half of the cream cheese mixure over that, then half of the strawberries. Repeat layers, ending with strawberries.
Chill until ready to serve.

A favorite at my house:
Banana Split Cake
1-1/2 cups graham cracker crumbs
1-1/4 cups sugar, divided
1/2 cup (1 stick) butter, melted
2 pkg. (8 oz. each) neufchatel cheese, softened
1 can (20 oz.) crushed pineapple, drained
6 medium bananas, divided
2 cups cold milk
2 pkg. (4-serving size each) sugar-free, fat-free chocolate instant pudding mix
2 cups thawed Cool Whip topping, divided
1 cup chopped pecans
1 small jar maraschino cherries, drained
MIX crumbs, 1/4 cup sugar and butter; press firmly onto bottom of foil-lined 13x9-inch pan. Freeze 10 minutes.
BEAT cream cheese and remaining 1 cup sugar in bowl with electric mixer until well blended. Carefully spread cream cheese mixture over crust; top with pineapple. Slice 4 of the bananas; arrange over pineapple.
POUR milk into large bowl. Add dry pudding mixes. Beat with wire whisk 2 min. or until well blended. Stir in 1 cup whipped topping; spread over banana layer in pan. Top with remaining whipped topping; sprinkle with pecans. Refrigerate 5 hours. Just before serving, slice remaining 2 bananas; arrange over dessert. Top slices with one or two maraschino cherries.

In a 9x13 pan, cover the bottom with graham crackers (NOT crumbs). Top this with a thin layer of Cool Whip (I prefer to use the fat-free one). Cover this with a thin layer of drained and rinsed fruit cocktail. Make one more set of these three layers - graham crackers, whipped topping, fruit cocktail. By now your pan should be full. Refrigerate overnight. Slice and serve.
