Radishes are the absolute fastest, I guarantee it. Broccoli, cabbage, cauliflower are almost as fast. Marigolds are pretty fast. I agree that annual rye grass is pretty fast. Morning Glory is really fast. The slowest are Carrots (~3 weeks) Geraniums(~3-4weeks). Soaking the seeds in luke warm water overnight before planting will speed up germination. Also warmth such as 75-85 degrees F really speeds germination.

Papaya seeds. I grow a lot of different plants for fun and I planted a bunch of vegetable seeds extracted from things that I ate. Papaya was upbelievably fast.
Directions:
Cut papaya in half and scoop out the seeds in the middle.
Remove little membrane sacks around the spiky seeds.
Rinse seeds and then place on a napkin to try for about a day.
Soak seeds in water for about 30 minutes and then spread them over to top of a thin layer of damp peat moss or potting soil in a container that is covered but loosely fitting (to retain moisture). Cover seeds with a very thin layer of same soil. I placed this container (I used a plastic tissue culture dish) in a 10 gallon aquarium with overhead compact fluorescent light. The germination rate was extremely high and most germinated in a few days (with several emerging after one). These seedlings are susceptible to damp off though. The other upside is that you get a tremendous amount of seeds from one papaya.
Many fig species also germinate extremely quickly and grow rapidly.

Lima beans are great because they give a great visual.
Remember young kids see this in an over expanded view. Remember how everything seemed so much bigger when you were younger... and it wasn't just because you were smaller. It is why cartoons appeal to kids.
Anyway, use the large beans becasue you can put them up against glass and they can see them grow and you can take them appart and the size makes it easy for them to see.
I needed glasses when I was in 1st grade but I didn't know that I could not see well because I didn't know any different. I only learned math because the numbers were big on the page and the letters were smaller so I had more trouble seeing them. I loved other subjects because I could see them and I remember the bean project in little dixie cups. Once I got my glasses the next year it became easy to learn like the other kids.
Whatever seeds is fast but also BIG !!

Beans. Just regular old pinto, navy, kidney. Quick germination time, and a large seed that they can see the different parts of when split open.

I don't know what the fastest ones are but I know of very fast germination seeds. I used to work in a alfalfa sprout plant. So, I know for sure they grow very fast and relatively easy to grow :)

nasturtium seed
Id use the lima bean use a glass jar or lid and put in a damp paper towel if in jar place been between glasss and toel.
Keep wet put not submerged.
Do several just in case you get a " dud"
you could sprout mung beens or alfalfa seeds etc, but the Lima will be more easy fo kids to see roots etc.
Heck try a few things to see what sprouted fatser.
