Dip slices of zucchini in egg and then into flour with salt and pepper. I sometimes use a touch of cornmeal with it for a sweeter taste.

First of all you will need saome flour, 3-4 eggs for approx 2 zuccini
and some fine bread crumbs and i like to add some grated parmesan cheese.

Start off by washing two zuccinis
cut the ends off and then cut in half cut each piece in half again and then make wedges from those pieces
dredge the pieces in the flour shkae off excess flour
place them in the egg wash mixture of the eggs and a little milk or water
lift them out and place in bread crum mixture I find using a
a high sided pan works well to do lots at once and to cover them more evenly
preheat deep fryer to 375 degrees farenheit
cook until golden about 3-4 minutes
enjoy

I have seen it made like the following and I have tried it and liked it, First slice all your zucchini in 1/4 inch slices or thicker if you prefer. spread out on paper toweling and sprinkle with a little salt let stand 30 minutes brush off any excess salt as the salt draws out some of the water. And dip in egg water solution, then in Italian seasoned bread crumbs fry in olive oil 2 to 3 minutes on each side until golden brown. if you like after removing from pan sprinkle Parisian cheese over top and enjoy

Take all purpose flour (about a cup) and season it well with salt and pepper. Slice your zucchini about 1/2 inch thick. Dredge well in flour and shake off as much excess as you can.

Heat oil in a frying pan (about 1/4 inch or so...you don't want to deep fry them!) until hot but not smoking. CAREFULLY place your floured zuccini in the pan and cook until golden brown on one side. Flip over and cook until golden brown. Drain on papertowels and season with salt and pepper (if necessary) and eat.

One thing to be careful of...you'll have to cook this in batches, and toward the end of your zucchini, the excess flour that comes off the squash will conglomerate in the center of the pan and will burn easily. This is why you have to make sure to shake off as much as possible.
