Most sources I've seen said to store in the refrigerator, but some say to store tightly wrapped in plastic, and others say loosely wrapped in wax paper so the cheese can "breate"? Does anybody know the best way to store cheese? I am most interested in hard cheeses, like cheddar.

it must be kept cool and air tight. tightly wrapped in plastic in the refrigerator is the best. when you were given advice to store cheese in paper or other methods that allow cheese to breath it is likely they were speaking of a way to age the cheese, which is not what you are looking for.

I have used a food saver sealer. I have bought Tilmook medium cheddar baby loafs and cut them into pieces and sealed them. Then I put what I don't need into the freezer. You can also leave some in the refrige and open when needed.

I like to put mine into ziploc bags or in plastic wrap in an airtight container in the meat drawer of the fridge...

I would store in wax paper at the very bottom of the fridge

I always keep mine in the refridgerator wrapped in plastic and it always stays fresh.
