you can try to cook stir fry ginger-spring onion chicken.

boneless chicken meat ( i may suggest you get the part from thigh or drumstick , it taste better. then thin slice into bit size )
mince garlic
oyster sauce
ginger thin slice
spring onion cut into 3 parts
soya sauce
sugar
some corn starch ( to thicken the gravy )
pepper ( optional )

marinade the chicken meat with little bit of soya sauce
slow fry the garlic until golden brown, then add ginger to stir for a while follow by the chicken meat stir fry until 80% done in high heat then some salt, sugar, oyster sauce and little pinch of pepper to taste. Then add in spring onion, you can add some water if too dry but not too much. Mix some corn starch with water then pour in the still cooking ginger-spring onion chicken and stir a while. Now you will find the gravy is ticken and the dish is ready to be server.

Hope you enjoy it ....remember after put in chicken meat must use high heat to cook...this is what is stir fry all about.

I like to "poach" my chicken in a variety of sauces, then pour over rice...Asian, depends on what you like, maybe sweet and sour or hoisin with added scallions and veggies or Indian, a nice mildly spiced green coconut curry...yum...
