not all of them have vinegar in them...most do not, but the vinegar is an acid and would probably tenderize the crust.

The best crusts I have made haven't had vinegar... just water, butter, flour and chilling time in the fridge.

same reson you put salt in ur bread dough

in my my culture we usually put it because it mobolyses the tender moist flour to compel its raw roughness and actually stops i from getting most of the steam tht generates out during cooking plus flavor gives a sicreetion to the dough for the right amount of crusty ness u need but other optionals are avilable to u at groceries.com

Never heard of that! But....use lard...not Crisco. Crust is waaaaaaaay better!
