Go on a special romantic, relaxing, classy venture for the weekend. With all the Xmas trimmings. Enjoy all there is to Xmas. Like candlelight service. And ice skating. A Xmas play, concert or just looking at the Xmas lights. Go to a hospital and give a gift to a lonely person. Or feed the hungry. Or sing Xmas carols. Dine at a 5 star restaurant. Or stay in 5 star hotel. Relax in front to a fireplace and listen to oldies but goodies Xmas music. Go on a horse driven buggy ride. Or go to the farm. Or play Santa for a family that needs a day of joy. Just remember that Xmas is a feeling not package or boxed. Enjoy.

Take a road trip to a vineyard. Or a spa weekend. On a less expensive note, you could do a museum or two, or go shopping! Maybe find a great big mall somewhere other than you home town.
Have fun.

I don't know about your area but you might check around for a teashop. It's a place where you go and have lunch and tea or coffee or some sort of beverage that you like. and it's really a sweet place to take someone. You can even dress up before you go like they did long ago with the wide brimmed hats with ribbon on them and some sort of sundress and white gloves to look the part of southern ladies going to teas!

We have these shops in my area and they are all the rage!

Oh, you have many good choices in the bay area. I would suggest a great spa day for the both of you, a great stress reliever and fun. Some places have packages for two. You can have a facial, massage, manicure, etc.

Go antique shopping in the countryside. Stay in a B&B. The country is such a great place to clear your mind and gives plenty of time for great conversation.

Wine tasting in Napa if she's over 21. If not, Highway 1 is beautiful. Just cruise!

Is she into orchestra? I'd love to do the Nutcracker Ballet. It's also a great place to go shopping.
