Chili Mac the fast way....

Brown a pound of hamburger, spice to your liking
Add 1 can tomato soup, I use Campbells
Add 1 can vegetable soup
Fill a soup can with water and add, stir it all and bring to boil.

Here is the tricky part, add a small box of elbow macaroni to the liquid and stir. It soaks up the fluid so watch it an add warm water as it gets thick until the noodles are done.

About 15 minutes.

You could always preboil the macaroni first, but it wouldn;t be fast then, would it?

Baked Spaghetti. Cook a pound of thin spaghetti, added canned sauce. Layer casserole pan with spaghetti, mozzarella and cheddar cheese. Bake until bubbly. Serve with Crusty Italian bread and a nice tossed salad.

I just had a Montreal smoked meat and Caribbean chicken sandwich on rye with mustard pickles, tomato, cheddar and lettuce. It was fast, healthy and absolutely yummy. Now I am going to have some berries.

You can use my own Chicken Cordon Bleu. For the stuffing, use prosciutto, greer cheese, a roasted green chili, and a basil leaf. Wrap the chicken around those, bread them and bake.

I cook all the time for two...

tonight it will be, sloppy Jo's, on large soft rolls, with cole slaw, and some fresh picked cucumbers on the side salted and peppered. And of course, Ice Tea.

Haven't decided on dessert yet.....maybe some homemade sherbert.
