I went to a party one time and someone had made a corn dip. It was absolutely delicious. It was kind of spicy, but not too bad. They served it with corn chips. Does anyone have any idea what this recipe was?

Corn Dip

A wonderful dip to start your entertaining off with. Something everyone will love.

Ingredients
2-11 ounce Cans of mexican corn
4 ounces Chopped jalapenos
2 cups Mayonnaise
8 ounces Shredded parmesan cheese
2-8 ounces Packages of colby/monteray jack shredded cheese
Chips for dipping

Preparation
Mix all ingredients together


(not chips)and put in a greased baking dish. Bake at 350 for 25-30 minutes.


Cheddar Corn Dip
Looking for a different appetizer idea? This warm and cheesy dip is sure to hit the spot. Serve with crispy tortilla chips and watch it disappear before your eyes.

Prep. time: 10 minutes Cooking time: 10 minutes

Ingredients


1 package (10 oz) STOUFFER'S® frozen Welsh Rarebit, defrosted according to package directions
3 tablespoons all-purpose flour
1 1/2 cups whole-kernel corn
1 cup ORTEGA® Salsa Prima Homestyle Mild
1/2 teaspoon cumin, ground
1/2 cup sour cream
1/2 teaspoon cumin
2 green onions, sliced (optional)



Directions

COMBINE Welsh rarebit and flour in medium saucepan; stir in corn, salsa and cumin.

COOK over medium heat stirring constantly. until dip begins to boil gently. Slowly add sour cream. Garnish with green onions.

HOT CORN CHIP DIP

Use glass pie plate. Spread softened 8 oz. cream cheese on bottom of plate. Layer:

1 can Hormel chili
1 (4 oz.) can chopped green chilies
3 oz. shredded Cheddar cheese
3 oz. shredded Mozzarella cheese

Microwave on high for 3 minutes. Turn microwave 3 more minutes and serve!!

I think this is what you are looking for:

CORN DIP

3 cans Mexicorn, drained
1 small can green chilies
1 ½ cup mayonnaise
1 ½ cups sour cream
1 cup chopped jalapenos
16 oz. Mexican shredded cheese (the one that has jalapenos in it)

Mix together the mayonnaise and sour cream first, then add the other ingredients.

Serve with fritos.

Add sour cream and taco seasoning to the first recipe above and it is GREAT!
