You might have a calcium build up in the tubes running from the water lines into the ice maker.

You can temporarily disconnect the water line and try to clean it out with vinegar, but it would probably be easier to just simply replace the small water line that goes to the fridge.

You probably have hard water (minerals in it) do like the one above said use a filter on the water supply to the ice maker!)

It's calcium mineral build up. Filtering the water will help but theres no health risk or anything to worry about.

You probably have hard water. The flakes are calcium carbonate. It won't hurt you. In fact, calcium is good for your bones.
