Potato Bread

1 1/2 cups water
1 1/4 cups milk
1/4 cup margine
1/4 cup honey
3 1/2 cups flour
1 1/2 cups potato flakes
1 1/2 tsp salt
2 packages dry yeast
2 eggs well beaten
2 1/2 to 3 cups whole wheat flour

In a medium saucepan, heat water, milk, margarine and honey
until warm. In a large bowl combine 2 cups flour potato flakes
salt, yeast an eggs. Add warm liquids beat vigorously with a
spoon or with an electric mixer on medium speed. Use a spoon
to stir in whole wheat flour and only as much of the remaining white flour as needed to make a soft dough. Turn dough out onto a light floured board or pastry cloth. Put in a greased bowl and
cover to rise until double in bulk. Grease 2 loaf pans and punch
down dough and divide in half to shape for loaf pans. Cover and
let rise until double in bulk. Bake in a 375 F over for 35 to 40 minutes. This is one I enjoy when I don't have real potatoes
on hand otherwise substitute water for potato water and potato
bread is a nice change to just regular bread.

Your results will be much more consistent if you weigh the ingredients with a kitchen scale, rather than use volume measure. That's cause the amount of flour in a cup can vary widely, but the amount of flour in a pound is always a pound. So search for recipes that express the quantities in weight.
