People latch onto beliefs and develop their own to help them deal with life. And the only way those things help them deal with life is if they believe them with the greatest conviction.
The first step toward wisdom is admiting that you know little.
As far as God is concerned, the belief in an afterlife helps people deal with the fear of death. If death really isn't the end, it's not as scary. And if good people go to heaven and bad people to hell, it helps the good people feel better when bad people seem to get off easy. They believe true punishment is waiting even if they have escaped it here on Earth.
Saying something is or isn't true when you lack proof either way stops the search for knowledge.
Where would we be if everyone still believed the earth was flat and never questioned the lack of proof that it was?
To say God exists requires faith, not proof. To say he doesn't exist because of a lack of proof is also foolish. There are many things people thought didn't exist simply because no one had yet found the proof. Fortunately, there are those who don't mind continuing the seemingly pointless search for truths most people think do not exist.

But who's to say in a hundred years some of those aren't considered a "great philospher"? Many philosphers from hundreds of years ago have been proven wrong....

Why can't you admit that you can't prove that god does exist. And just because you do not have the intellect to be capable of understanding someones philosophies that are different from yours doesn't mean that they are making it up or that they think they are some great philosopher. Maybe they just made the mistake of overestimating the IQ range of the people they are trying to communicating with.

This kind of stuff is GREAT for our minds. We get challenged and Incite from LOTS of different people we Polly would never have a chance to share ideas with. Either because we don't want to start trouble or push our option's on people in a social situations. I love this thing! My favorite subjects are politics, religion, and science. And those are what you refrain from ever discussing. this way people can only learn from one another. If you don't like it change subjects.

I don't know it all and none of us knows it all. We all know a little in part and we are all pieces of a grander puzzle. There clearly is a God. From the beginning of time man has reached out to a higher being in every race and culture. There is a God shaped hole in all of us and I believe we must walk that road personally. Who says these people aren't great philosophers. Most of the great ones were persecuted in their time. It is amazing what answers you can come up with when you listen to the still voice within.

People believe what they want to believe. Simple math. 1+-1=0
aka... God Exists + God Doesn't Exist = No God
There is no proof God doesn't exist, because he has yet to exist. He's fictional, much like Mickey Mouse is to children. We live in a world of imagination. None of us are real; when we die it's like we never existed. The only difference we make is the one we ourselves create through our children.

I know a guy with lots of theories like you describe. He lands in the psych ward every time he gets off his medication. Maybe the people you are talking about are off their meds too.
