An important ingredient in a good pancake mix is buttermilk. It gives the batter a pourable consistency.

1 1/4 cups all purpose flour
1 egg
1 1/4 cup buttermilk
1/4 cup granulated sugar
1 heaping teaspoon baking powder
1 teaspoon baking soda
1/4 cup cooking oil
pinch of salt


1. Preheat pan over medium heat. Use a pan with nonstick surface or apply a little nonstick spray.

2. In a blender or with a mixer, combine all ingredients until smooth.

3. Ladle approximately 1/3 cup batter into the hot pan, forming 5 inch circles.

4. when the edges appear to harden, after a minute or two, flip the pancakes. They should be golden brown.

5. Cook pancakes on the other side for same amount of time, until golden brown.

6. Serve with topping or syrup of choice.

Makes 8 to 10 pancakes.

Quick and oh so easy.

INGREDIENTS:
1 1/4 cups all-purpose flour

1/4 cup vegetable oil

DIRECTIONS:
Preheat a skillet over medium heat. Combine all ingredients in a blender. Puree until smooth.
Pour batter onto the griddle, to form 5 pancakes. Flip pancakes when edges appear to harden. Cook pancakes on other side for same amount of time until golden brown.

Bridge Stree Inn's Pancake

3 eggs
3 Tablespoons amond filling
1/2 cup all purpose flour
1/2 teaspoon salt
1/2 cup milk
2 talbespoons butter, melted
1/2 cup sliced almonds
2 tablespoons butter, melted
1/2 cup sugar
2 tablespoons butter, melted

Whisk together teh eggs and the filling with a fork or wire whisk (use a flat one). Sift the flour, measure it and sift it again with the salt. Add to the beatn egg mixture in 4 addtions, beating after each addtion, until mixture is smooth. Add the milk, 1/4 cup at a time, slightly beating afte each addtion. Add the melted butter to the batter.
Butter the bottom and sides of a 9 nch cast iron skillet with 2 tablespoons butter. Pour the batter into the skillet and bake in an oven preheated to 450 for 15 minutes. Qucikly sprinkle the pancake with the almonds, drizzle with melted butter and sprinkle with sugar or splenda. Bake an additional 5 minutes. Slip onto a heated plate and serve.

1 egg, slightly beaten
1 1/2 cups milk
2 tablespoons melted butter

Sift together flour, baking powder, and salt. In a separate bowl, combine egg and milk; add to flour mixture, stirring only until smooth. Blend in melted butter. Cook on a hot, greased griddle, using about 1/4 cup of batter for each pancake. Cook until brown on one side and around edge; turn and brown the other side. Recipe for pancakes serves 4.

DAD'S HOMEMADE PANCAKES

1 c. flour
1 tbsp. baking powder
1/2 tsp. baking soda
2 tbsp. vegetable oil
3 tbsp. sugar
1 c. milk
1 egg
1/2 tsp. salt

Combine dry ingredients. Add milk, egg and oil. Mix until smooth. Heat non-stick pan over medium heat until water beads. Do not oil. Pour pancake mixture in 1/4 cup amounts. Turn when tops are covered with bubbles and edges look cooked. Remove from heat when pancake stops steaming.
