This is my favorite. Been making it for years. With no mayo.

Macaroni Salad
Serves 5
2 cups cooked elbow macaroni
11/2 tbs lemon juice or 2 tbs vinegar
1 tbs canola oil
1 tsp grated onion
1 cup celery, diced very small
1 cup parsley, minced
1/2 cup black olives, chopped small
Salt and pepper to taste
3 tbs sour cream
2 tbs pimiento, chopped

Place macaroni in large bowl. Beat together well the lemon juice (or vinegar) and canola oil. Add to macaroni. Chill for several hours. After chilling, toss the macaroni with the remaining ingredients.

As with most food I make, all of the above are guidelines. I usually follow the recipe the first time and if I like it, I'll tweak it a little the next time.

Amish Macaroni Salad Recipe #94164
I really love Amish Macaroni Salad, and this is my favorite recipe for it. Amish Macaroni Salad is somewhat on the sweet side, so if you don't mind your salads sweet, I think you'll like it too. It's even better the next day, so if you can, let it sit overnight. I got the recipe from a Berk's County website a while back. NOTE: It does make a lot of salad, so if you wanted a smaller amount, it halves easily. Just use the 3 eggs chopped up and just garnish with paprika. Time does not including cooking the macaroni.
SALAD
1 lb macaroni (or small shells)
1/2 cup finely chopped celery
1/2 cup finely grated carrots
1/4 cup finely chopped onions (more if desired)
1/4 cup chopped green peppers (optional, see note at end)
6 hard-boiled eggs (reserve 1 to slice for garnish, and chop the remaining 5)
paprika, for garnish
DRESSING
2 cups Miracle Whip
1/4 cup vinegar
3/4 cup sugar
2 tablespoons prepared mustard


Cook macaroni as directed on package; Drain& cool.
In a bowl, whisk together the dressing ingredients so they are well-combined and smooth.
In a large bowl, gently combine the macaroni, celery, carrots, onions, and remaining eggs.
Fold the dressing gently into the macaroni salad mixture.
Place into your serving bowl and garnish with the reserved slice egg and paprika.
Let sit overnight for the best results.
NOTE: It was not in the original recipe, but I sometimes add 1/4 to 1/2 cup chopped green pepper if I have it around.

American Macaroni Salad

2 cups dry elbow macaroni, cooked, rinsed, and drained
1/3 cup diced celery
1/4 cup minced red onion, soaked in cold water for 5 minutes, drained
1 tablespoon minced flat leaf parsley
1/2 cup diced vine-ripened tomato (optional)
1/2 cup prepared mayonnaise
3/4 teaspoon dry mustard
1-1/2 teaspoons sugar
1-1/2 tablespoons cider vinegar
3 tablespoons sour cream
1/2 teaspoon kosher salt plus more to taste
Freshly ground black pep

In a large bowl combine the macaroni, celery, onion, parsley and tomato, if using. In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt. Pour the dressing over the salad and stir to combine. Season with salt and pepper to taste. Serve. Store covered in the refrigerator, for up to 3 days.

LINDSEYS AMAZING MACARONI SALAD

1 package elbow noodles
3 roma tomatoes
1 small purple onion
1/4 cup sweet relish
1 small can (Lindsay) chopped olives
6 hard boiled eggs
3/4 cup mayonnaise
1/4 cup mustard
salt and pepper

Boil noodles until soft, drain, rinse let cool in refrigerator, while cutting everything else. Dice tomatoes cut onions finely cut eggs (like making deviled egg sandwich) then mix together all ingredients at or leave out whatever you want to liking!

Best if made day before.

not to brag, but I am famous for my macaroni salad.
cook 1 or 2 cups of baby shell noodles, rinse, put aside.
cut up into small pieces, 1 cup celery, 1 cup green pepper, 1 cup cheese chunks[small].
put all this in a big bowl, add as much to taste of this as you want,
mayo or miracle whip, vinager, mustard, pepper, seasoning salt.
mix all till well blended, chill for about 1/2 hour. Yummy.
hint, if you only want a little, only cook 1 cup shell noodles. good luck.

Simple, but really yummy:

Mix any kind of cooked macaroni with a can of peas & carrots, some chopped pickles, mustard, mayonaise, salt, pepper and parsley.

Refrigerate.
