Hawaiian Meat Balls

I really enjoy the sweet and sour flavor on a variety of foods (pineapple and green pepper just go together well esp. with vinegar and sugar). I have already submitted my sweet and sour pork chops, so here it is for the beef.
1 1/2 lbs ground beef
2/3 cup cracker crumbs
2/3 cup evaporated milk
1 teaspoon seasoning salt (Lawry's recommended)
1/3 cup flour
3 tablespoons shortening
SWEET AND SOUR SAUCE
1 (13 1/2 ounce) can pineapple chunks
5 tablespoons cornstarch
1/2 cup vinegar
2 tablespoons lemon juice
1 tablespoon soy sauce
1/2 cup brown sugar
1 green pepper, chopped into bite size chunks
1 (4 ounce) can pimientos, drained (marachino cherries can be used instead)

Combine the first four ingredients, mix well, but lightly.
Shape into meatballs- about 36 (may be frozen at this point and thawed as needed).
Roll meat ball in flour and brown in the shortening.
Place in a casserole dish and cover with the sweet and sour sauce.
SWEET AND SOUR SAUCE.
Drain pineapple (set aside)- reserve juice.
Add water to the juice to make 1 cup liquid.
In a pot over medium heat, blend cornstarch in the juice, then add vinegar, lemon juice, brown sugar, and soy sauce, cook until clear.
Add the pineapple, green pepper, and pimento.
Pour over the meatballs and bake at 350*F for 30 minutes.

My best friend Linda, served this appetizer last night. I wouldn't leave until she gave over the recipe!
1 cup butter, softened
1/4 cup finely chopped green onions
1 (4 ounce) can diced green chilies or jalapenos
1 cup monterey jack cheese, grated
1/4 cup mayonnaise
1/2 teaspoon garlic powder
1 loaf French bread (baguette)
10 servings

1. Combine butter, onion, peppers, cheese, mayo, and garlic powder.
2. Slice bread 1/4 inch thick, spread with butter mixture.
3. Broil until cheese bubbles.

Nacho Cheese Bites
Thaw Time: 30 minutes
Prep Time: 15 minutes
Bake Time: 15 minutes


Ingredients:
1/2 pkg. (17.3 oz.) Pepperidge Farm® Frozen Puff Pastry Sheets (1 sheet)
1 egg
1 tbsp. water
1 cup shredded Cheddar cheese
1/4 cup Pace® Chunky Salsa
5 pitted ripe olives, cut into quarters (optional)
Chili powder

Directions:
THAW pastry sheet at room temperature 30 min. Preheat oven to 400°F. Mix egg and water. Mix cheese and salsa.

UNFOLD pastry on lightly floured surface. Roll into 15x12" rectangle. Cut into 20 (3") squares. Place about 1 tbsp. cheese mixture in center of each square. Top with olive piece. Brush edges of squares with egg mixture. Fold squares to form triangles. Seal edges with fork. Place 2" apart on baking sheet. Brush with egg mixture and sprinkle with chili powder.

BAKE 15 min. or until golden. Serve warm or at room temperature. Makes 20 appetizers

I also use the sheets and make a Deli Roll.
Directions:
THAW pastry sheet at room temperature 30 min. Preheat oven to 400°F.

On a floured surface, use a rolling pin-slowly roll both left to right and then up and down to thin out the sheet and make it larger.

Spread with a mixture of Dijon Mustard and Mayo (or whatever grabs your fancy).
Add lunch meats (about 15 slices). I use corned beef, pastrami, salami and turkey slices.

Roll it up tightly like a Wrap.

BAKE 25 min. or until golden. Cut into pinwheels.
Serve warm or at room temperature. Makes 15 appetizers.

Homemade salsa and chips are always a hit here. Dice fresh tomatoes, green onions and cilantro. Add in a jalapeno. Take all the ribs and the seeds out and it will be fine. Add in some lemon or lime juice. Salt to taste and it's ready.
I also like different cheeses that you don't usually eat. I set them out with crackers or bread.

Pumpernickel bread with spinich dip is awesome too. I could eat that all day long.

Slice french bread into rounds
Put a small amount of boursin cheese on each round
Top with shredded mozzarella cheese
Broil till lightly golden

Top Flat bread/Pita with refrigerator type pesto
Add (seeded) chopped tomato
Sparingly add chopping kalamata olives
Add Feta Cheese
Finish with Mozzarella cheese
Broil until crisp on edges and golden on top. Cut into eights
*DO NOT overload with toppings. It will be soggy.

1 cup mayo
1 cup sour cream
1 box thawed frozen spinach (squeezed out)
Small can water chestnuts
6-7 cloves garlic
Tiny Dash Cayenne
Salt & pepper to taste
+ veggies/ bread/ or crackers to dip.
Easy to double.

Crab Puffs-450 for 10 minutes

1 package english muffins-halved
1 stick margarine
1 can crab meat
1 can Kraft Old English cheese spread
1/4 teaspoon garlic salt
1/2 cup mayo

Mix ingredients together, spread on english muffins, cut into quarters and freeze. When you want them put on cookie sheet and make for about 10 minutes at 450.

When I've got guest coming and don't have a lot of time, I'll pick up a pack of spinach or sun-dried tomato flour tortillas and spread cheese dip or ranch dressing on them, lay a piece of sliced ham or turkey on it, roll it up and cut it into bite sized pieces. Stick a tooth-pick in to hold it all together and you're done! Yummy and fast!

Here's one of my new favorites - I went to the Woodfire Grill in San Francisco, fell in love with it, and did my best to re-create it at home. So I can't promise it's anything like theirs were, but it's still tasty IMO!

Roasted Red Peppers with Goat Cheese

- 1 jar roasted red peppers, or roast your own however you like to do such things

- about 4 ounces of soft goat cheese, like chevre

- a few leaves of fresh basil

Slice the roasted red peppers in half. Turn the halves so the "insides" are facing up. Lay one or two basil leaves on each half and smear with a little goat cheese. (It is, in fact, possible to put too much!) A little sprinkling of other seasonings probably wouldn't hurt at this point - black pepper, garlic powder, what have you. Roll up the halves, slice them into smaller pieces if desired, and skewer with toothpicks.

So simple, and so yummy. Extra flavorful if you get the jarred peppers, because of their marinade.

REUBEN DIP

8 oz. cheddar cheese, grated
8 oz. swiss cheese, grated
8 oz. turkey pastrami, diced
32 oz. sauerkraut, well drained
¾ cup mayonnaise

Mix all ingredients together, put in casserole dish, and bake at 350 degrees for 30 minutes. Serve with Club Crackers.

CORN DIP

3 cans Mexicorn, drained
1 small can green chilies
1 ½ cup mayonnaise
1 ½ cups sour cream
1 cup chopped jalapenos
16 oz. Mexican shredded cheese (the one that has jalapenos in it)

Mix together the mayonnaise and sour cream first, then add the other ingredients.

Serve with fritos.

Place a block of cream cheese on a plate, top with some good pepper jelly. Serve with crackers. Delicious and SIMPLE
