Funnel Cakes IV

INGREDIENTS:
1 eggs
2/3 cup milk
1 tablespoon and 1 teaspoon white sugar
1-1/4 cups all-purpose flour
1/8 teaspoon salt
3/4 teaspoon baking powder

DIRECTIONS:
In a medium bowl, mix salt, baking powder, and half of the flour. Set aside.
In a large bowl, cream eggs, sugar and milk. Add flour mixture and beat until smooth. Continue to add remaining flour, but use only enough to achieve desired consistency. Batter will be thin enough to run through a funnel.
In an eight inch skillet, heat the oil to 375 degrees F (190 degrees C).
Put your finger over the bottom opening of the funnel, and fill the funnel with a generous 1/2 cup of the batter. Hold the funnel close to the surface of the oil, and release the batter into the oil while making a circular motion. Fry until golden brown. Use tongs and wide spatula to turn the cake over carefully. Fry the second side one minute. Drain on paper towels, and sprinkle with sifted confectioners' sugar or cinnamon sugar.

My mother is Pennsylvania Dutch and I know how great those funnel cakes are! But honestly, I do not recommend making one to serve 4 people. The batter that is in the pan first may burn while you finish it off and get that last bit in. I recommend using a smaller skillet and make each person their own, they cook up quicker and have less of a chance of burning than if you made one big one and cut it into fourths when done. I have a great funnel cake recipe. Since it uses such a small amount of sugar I went ahead and substituted Splenda. That way I don't feel too guilty eating it.

1 cup flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1 egg
1 cup plus 1 tablespoon milk
2 tablespoons sugar (Splenda)
Optional toppings: powdered sugar, granulated sugar, cinnamon sugar, warmed apple or other fruit filling, fresh strawberries and whipped cream, ice-cream

Preparation:
Combine flour, baking powder and salt in a bowl with a wire whisk. In another bowl, beat egg and milk. Add sugar to egg mixture and stir to dissolve. Add dry ingredients and (using an electic mixer) mix until smooth.

Heat at least 1 inch of oil ( Vegeable oil is what I use) until hot but not smoking. If your unsure drop a small drop of batter into it. If it immediately surfaces and browns then it's just right. I pour the batter into a ziploc bag and snip a small corner. I start in the middle of the pan and make circular shapes. Cook 1 minute and using tongs or two spatulas turn funnel cake. Cook until golden brown, about another minute or so. Drain on paper towls. Top with your favorite topping. Serve warm.

Hope you like this recipe. I made it for friends on a movie night. I made the batter ahead and kept it in the fridge for an hour or two til I was ready to make them. Once you start it goes really quickly. You can make them and set up all the toppings and let your guests top it themselves.

FUNNEL CAKES

1 1/4 c. all-purpose flour
2 tbsp. sugar
1 tsp. soda
3/4 tsp. baking powder
1/4 tsp. salt
1 egg
3/4 c. milk
Vegetable oil
2 tsp. powdered sugar
Syrup

Combine dry ingredients. Add egg and milk, beating until smooth.

Heat 1/4 inch oil to 375 degrees in a skillet. Cover bottom opening of funnel with finger (funnel with an opening of at least 3/8 inch works best).

Pour 1/4 cup batter into funnel. Hold funnel over center of skillet. Remove finger from funnel end to release batter into hot oil; move funnel in a slow circular motion to form a spiral or other designs.

For 2 minutes or until golden brown, turning once. Drain on paper towels. Sprinkle with powdered sugar; serve hot with syrup. Makes 6

i bought a funnel cake maker at wal-mart and i love it and it is cheap and easy to use nothing to it...hope this helps

I don't know, but I saw paula deen take some canned buiscuits and deep fry them and put powdered sugar on them.
