Cucumbers and squash have either no or very little grams of carbs. I have been an insulin-dependent diabetic for almost 20 years now, and those veggies have never been listed as starchy ones in my diet books or plan. However, peas, corn, and potatoes are very starchy veggies. As a diabetic, I eat sliced cucumbers all the time as a "free" food, meaning, I don't have to count it into my diet plan because they are so low in calories. Hope this info helped and have a great day!
