celery seed is a very strong seasoning, a little bit goes a very long way. the only way to make the celery seed less over powering is to make more chicken salad with the mix you've already made...hopefully, you won't have to make 20 pounds of the stuff......lol

if that happens, send me some, i like chicken salad.

The only thing to do to make sure it tastes right is to throw it away and start over. I know it's hard, but it's the only way. And to make sure you don't use too much celery seed (or any other spice or seasoning), put each seasoning into a bowl and add it by hand to make sure a whole bunch doesn't come out of the bottle at one time.

Here's a great chicken salad for Summer though:

Hawaiian Chicken Salad

2 chicken breasts, boiled, cooled and diced
1 C. mayonaise
1 small can of crushed pineapple
2 stalks of celery chopped
1 small bunch of green onions, chopped
1 C. Spanish Peanuts Or skinless if you prefer
salt and pepper to taste. Yum!!
Great alone or serve on a bed of Lettuce or Bok Choy
*My friend gave me this recipe, and now i hardly ever make the regular chicken salad anymore!

I would add that celery is balanced by onion and carrot. In addition to the onion, I recommend adding carrot, which will also add a bit of sweetness. Another ingredient to try is a bit of grated fresh ginger.

i did that very same thing with chicken soup!!!!! man it tasted like it was burnt it was so bitter!!! heres what i did -- i added a bunch more water to the pot, added SAGE, which is celerys aromatic opposite, carrot. onion and a bit of garlic, it made a little difference but not much :{

celery and onion are at opposites ends of the flavor spectrum....try adding a little more green onion or minced onion...your other alternative is to double the batch
