That's one thing he does get, he LOVES fruits. He gets grapes and half a banana every morning. He's just not to crazy about the eggs and bacon and toast just yet though. I also find that he breaks out all over his face and body when I feed him honey nut cream cheese and sometimes apple cinnamon oatmeal. He does fine w/ nuts though. Makes ya go hmmmmmmmmm.?!?

Mine likes any kind of cereal, and he eats it if he gets to pick out what kind. So I usually have 2 or 3 healthy choices and he decides which kind he wants. He also LOVES pancakes, so I buy the whole wheat pancake mix and throw in some frozen blueberries or tiny chunks of apple or whatever I have on hand. If we do pancakes for lunch, I shred up carrot and toss it in. I've used zuchinni and yellow squash too - he never notices!

I forgot - I like to make fruit and veggie muffins or mini loaves of bread. Wrap in foil and freeze in a plastic container and just get one out each morning and defrost. Here are 2 recipes I like.

Carrot Oatmeal Muffins
1 cup white flour
1 cup whole wheat flour
2 tsp. baking powder
1/4 tsp. slat
1 tsp. cinnamon
1/2 cup white sugar
1/2 cup brown sugar
1/4 cup canola or vegetable oil
3/4 cup unsweetened applesauce
3 eggs, beaten
1 tsp. vanilla
1/2 cup oatmeal
1/2 cup flaked coconut
1/2 cup raisins
2 cups shredded carrots
1 8 oz. can crushed pineapple, drained

Preheat oven to 350. Lightly grease muffin tins. In a large bowl, mix the flours, baking soda, salt and cinnamon. Make a well in the center of the mixture and add sugars, oil, applesauce, eggs and vanilla. Mix just until evenly moist. Fold in oats, coconut, carrots, and pineapple. Fill muffin tins 2/3 full and bake for 25 minutes. Makes 18. (lots of vitamin A!)

Little Punkins

1/4 cup vegetable oil
2 eggs
1 egg white
2/3 cup raisins
1/2 cup chopped dried apricots
1 3/4 cup apple juice concentrate
1 cup canned pumpkin
1 cup whole wheat flour
1/2 cup flour
1/2 cup wheat germ
2 tsp. baking powder
1 tsp. cinnamon

Beat oil, eggs and egg white in large bowl. Chop raisins and apricots in blender or food processor with the apple juice. Add pumpkin and blend. Fold pumpkin mixture into egg mixture. Combine the flours, wheat germ, baking powder and cinnamon in a bowl. Add the flour mixture to the pumpkin mix. Stir just until blended. Pour batter into muffin tins and bake at 350 for 25 minutes. Cool in tins for 10 minutes and remove to wire racks to cool completely. Makes 24 muffins.

My son even eats these for snacks! Hope these help!

Luckily my 1 1/2 year old eats anything and all of it...pancakes, frech toast eggs, he loves bagels with cream cheese and his favorite is an egg and cheese quesadilla. Scramble an egg, put it in a flour tortilla and smother it in cheese ( we usually put some bacon or sausage in there for him too)

Be inventive, how about toast with peanut butter sprinkled with a few raisins and juice. That way, he gets his fiber / protein / vitamin C.

Make sure he takes a good daily vitamin. Most 2 yr olds are very picky -- he will soon adjust to your foods.

Give him anything he can pick up with hes fingers. Like cold cereal, bananas, apple chunks, pineapple, french toast sticks or pancakes cut into small pieces, waffles, etc
2 year olds are not supposed to get honey. It can either make them severely ill or kill them.

Our 18 month-old loves to eat yogurt. Now that she is older, she especially loves the kind in the little tubes that she can squeeze out herself. (Gogurt)

Whatever he will eat!!!! I'm lucky to get him to eat at all, so I give him whatever he wants!!! It's always a challenge to find a meal for him because he has to eat vegetarian due to a protein disorder.
