Need to change my diet, but I'm a carb freak who also loves cheese, toast (with my eggs), sandwiches for lunch and EASY cooking options. Any suggestions on how to make my diet fun and easy?

Cheese and eggs yes toast no.If you choose to go the high protein/low carb way of life then it starts in your mind. It is a mind set that you are changing the way you eat and not a diet. Diets do not work only changing the way you eat works regardless of what way you choose to eat. I do low carb and changed the way I eat 2 1/2 years ago and have no plans on ever changing.

try this: you can only eat carb and cheese 2 times a week ,and toast (with your eggs) sandwiches 3 times a week..then try eatin something new like italian pasta or something that is low in fat...good luck with your diet!!!!!!!!!!!!
