Recipe: Chocolate Macadamia Nut Cookies

10 tb Butter; (no substitute),
-- softened
3/4 c Packed brown sugar
1 ts Vanilla extract
1 Egg; lightly beaten
1 c All-purpose flour
3/4 ts Baking powder
1/8 ts Baking soda
1/8 ts Salt
1 1/2 c Semisweet chocolate chips
3/4 c Macadamia nuts; coarsely
-- chopped
3/4 c Pecans; coarsely chopped
-----------------CARAMEL GLAZE----------------------
12 Caramel candies
2 tb Whipping cream
In a mixing bvowl, cream butter, sugar and vanilla. Add egg. Combine flour, baking powder, baking soda and salt; add to creamed mixture and mix well. Fold in chocolate chips and nuts. Drop by teaspoonfuls 2 inches apart onto greased baking sheets. Bake at 350 F. for 10-12 minutes or until golden. Cool on wire rack. For glaze, melt the caramels and cream in a saucepan over Low heat, stirring until smooth. Drizzle over cooled cookies

INGREDIENTS:
2/3 cup butter
1/2 cup white sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla extract 1 1/2 cups all-purpose flour
3/4 cup chopped macadamia
nuts
6 ounces white chocolate,
chopped
DIRECTIONS:
1. Preheat oven to 325 degrees F (170 degrees C). Lightly grease baking sheets.
2. Beat butter, sugars, egg, and vanilla at medium speed of electric mixer until fluffy.
3. At low speed, gradually beat in flour, just until blended. By hand, stir in nuts and chocolate.
4. Drop by heaping tablespoonfuls, 2 1/2 inches apart, onto lightly greased cookie sheets.
5. Bake for 17 minutes or until edges of cookies are lightly browned and tops look dry. Allow to cool on baking sheets five minutes, then remove to racks to cool completely.

White Chocolate Macadamia Cookies Recipe
Makes 30 cookies
Ingredients:
1/2 cup unsalted butter, softened
1/2 cup light brown sugar, packed
1/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 cup and 2 tsp flour, divided
1/2 tsp baking soda
1/4 tsp salt
1 3/4 cups white chocolate chunks
1 cup macadamia nuts, unsalted, coarsely chopped

Instructions:
1. Preheat oven to 350 F.
2. Lightly butter two cookie sheets and set aside.
3. With an electric mixer cream butter, brown sugar and sugar at medium speed until light, about 3 minutes.
4. Add egg and vanilla and mix until well blended.
5. Sift flour with baking soda and salt.
6. Slowly add this mixture to the butter mixture.
7. Stir in chocolate chunks and nuts.
8. Roll tablespoonfuls of dough in your hands to make balls.
9. Place on baking sheets and gently flatten.
10. Bake until lightly golden, about 12 minutes.
11. Remove and cool.

White Chocolate Macadamia Cookies
Ingredients

1/2 teaspoon salt
1/2 cup butter or margarine (1 stick), softened
1/2 cup packed brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
3/4 cup white baking chips
1 cup chopped macadamia nuts
Instructions
Preheat oven to 375 degrees F. In small bowl, combine flour, baking soda, and salt.
In large bowl, with mixer at medium speed, beat butter and brown and granulated sugars until light and fluffy. Beat in egg and vanilla until well combined. Reduce speed to low; beat in flour mixture just until blended. With wooden spoon, stir in baking chips and macadamia nuts.
Drop dough by rounded tablespoons, 2 inches apart, on two ungreased cookie sheets. Bake until golden around edges, 10 to 12 minutes, rotating cookie sheets between upper and lower oven racks halfway through baking. With wide spatula, transfer cookies to wire racks to cool completely.
Repeat with remaining dough.
Yield: about 36 cookies
