with out cake flour or any other weird ingredient that i can make TODAY!?!

2-1/2 cup sifted cake flour
1-1/2 cups sugar
3-1/2 tsp. baking powder
1/2 cup butter, softened
1/2 tsp. salt
3/4 cup milk
1-1/2 tsp. vanilla
4 egg whites, at room temperature
PREPARATION:
Preheat oven to 350 degrees F. Grease and flour two 9" round layer cake pans and line the bottoms with waxed paper; set aside. Sift flour, sugar, and baking powder into a large mixer bowl. Add butter, milk and vanilla.
Beat on slow speed until blended. Then beat on medium speed for 2 minutes, occasionally scraping down the sides of the bowl. Add unbeaten egg whites (yes, UNbeaten - that's the trick), and beat two minutes longer at medium speed.
Pour batter into prepared pans and bake at 350 degrees for 35-40 minutes or until cake is light golden brown and is beginning to pull away from the sides of the pan. Cool 15 minutes in pans, then carefully remove layers from pans and cool completely on wire rack.

Fill and frost with Buttercream Frosting

White Cake

2/3 cup butter
1 3/4 cups sugar
3 egg whites
1 1/2 teaspoons vanilla
3 cups flour
2 1/2 teaspoons baking powder
1 teaspoon salt
1 1/2 cups milk (approximate amount)

Preheat oven to 375F degrees.
Mix butter & sugar until fluffy.
Add egg whites & vanilla.
Add flour, little by little.
Add baking powder & salt.
Add milk, little by little until consistency is right.
Pour in a 9x13 or cupcake pan, lightly greased/sprayed & floured.
Bake for 30-33 minutes or until toothpick inserted into middle comes out clean.

Don't worry about cake flour or buttermilk or anything like that. You can use regular flour instead of cake flour and for buttermilk just put 1 tbsp of vinegar into a cup (or however much you need) of milk, and let it sit for about 2 min until it sours. When in doubt, there's always duncan hines.
