Homemade Funnel Cake Batter:
Yields approximately 5 funnel cakes, depending on thickness.
Ingredients:
1 1/4 cup unsifted flour
2 tablespoons sugar
1 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
1 egg
3/4 cup of 2% milk
Directions:
In a large bowl, combine the first 5 ingredients (flour, sugar, baking soda, baking powder, and salt) and mix well.
Add milk and egg to dry mix and stir until batter is smooth.
Let stand for 5 minutes or refrigerate.
Using a frying pan, fill half the pan with oil. DO NOT OVERFILL PAN as oil expands when heated and batter will cause oil to rise when poured into the pan. If using a frying ring, be sure pan is wide and deep enough to hold ring.
Use a deep-fry thermometer to monitor the oil's temperature (should be 350-370°F).
When oil is heated, pour mix into fry pan. Pour in circle first 4-5 times and then zig zag across center to fill in holes. If using frying ring, pour mix inside ring, first in circle then zig zag.
When funnel cake starts to brown, remove the ring if used, and use tongs to flip the funnel cake. Browning should take 30-40 seconds.
Once browned, lift funnel cake out of frying pan with tongs. Hold over pan to allow excess oil to drain back into pan.
Placed cooked funnel cake on plate and sprinkle with powdered sugar or garnish with your favorite topping.

It is hard to know if this should really be called a
cake, but it has historically been called a cake, so
it is a cake, even if it is fried. This desert appeals
to children of all ages, it is a homey, and homely,
classic ~ attractive in its own strange way, and very
tasty. I have seen it served with whipped cream and
fruit toppings, so let your imagination run wild with
the toppings. This is a Pennsylvania-Dutch recipe, and
was printed in the food section of the September 25,
1986 Austin American-Statesman. This recipe was
credited to Laura Worm, Louise Lightsey, and Jeanene
Demel.
Add the liquid ingredients to the dry ones. Beat
until smooth.
Fill a skillet or pan with 1 inch of cooking oil and
heat to a temperature of 375 F. Now cover the small
hole of a clean funnel with a finger. Then fill the
funnel with the batter. Carefully move your finger
away from the hole in the funnel, allowing the batter
to flow into the skillet. Move the funnel to form
patterns with the batter. Fry until golden brown,
about 1 or 2 minutes, turning once with two spatulas.
Remove to paper toweling to drain. Place on a plate
and sprinkle with powdered sugar. Serve hot. Repeat
the process until all of the batter is used up.

3-4 cups all purpose flour
3 eggs
2 cups milk
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
powdered sugar (for topping)
vegetable oil (for deep frying - heat to 375 degrees)
Beat the eggs, then add the sugar and milk. Sift 2 cups of flour, the salt, and the baking powder and add to the milk, sugar, and egg mixture.
Mix while adding more flour until the batter is smooth and not too thick. The funnel should have an opening of at least 1/2 inch and be able to hold around a cup of batter. Put your finger over the bottom and add about a cup of batter. Remove your finger and allow the batter to pour into the center of the oil. Be careful, the oil may splash!
Gradually swirl the batter outward in a circular motion, or criss-cross back and forth to make a cake about 7 or 8 inches round.
We used to draw our initials to personalize our cakes! Check it with a pair of tongs and turn it when the bottom becomes golden brown.
When both sides are done, remove with tongs and let it drip on a paper towel.
Funnel cake is often served with powdered sugar on top. You could also use molasses, maple syrup, or fruit preserves.

To beaten eggs, add milk and sugar. In separate bowl sift dry
ingredients. Add to egg mixture, beating until smooth. Heat oil to
375 degrees and pour batter into hot fat through a regular household
funnel. Control the flow of batter by holding your finger over the
bottom of the funnel. Make patterns, designs, swirls or whatever
with the stream of batter as it flows into the hot fat. When
"cakes" are golden brown, drain, sprinkle with confectioners' sugar
and serve warm.

Preparation :
Beat egg and add milk. In separate bowl stir together flour,
sugar, baking powder and salt. Gradually add liquid mixture to dry
mixture and beat until smooth. You may need to add up to 1/4 cup
more flour if batter is too thin. Heat vegetable oil in deep fat
fryer. Pour batter into a funnel with finger covering hole. Remove
finger and let batter pour in a small stream into oil (move funnel
back and forth in a pattern to make a pancake with lots of holes in
it). Fry until golden brown. Remove, sprinkle with confectioners'
sugar and serve.
