I found this recipe earlier this summer and have been using it a lot!!! : )


Guacamole Butter

Ingredients:
1/4 pound butter, softened
1 tablespoon red onions, diced
1/2 tablespoon green pepper, diced
1/2 ripe avocado
2 tablespoons salsa
1/4 lime, juiced with pulp
Preparation:
Combine above ingredients in a bowl and mix with a handheld potato masher or your hand until well blended. Do not over blend, as the pieces of vegetable and avocado will look nice in the butter once chilled and sliced.

Once blended, place the butter onto a piece of wax paper and roll it up into a 1 1/2 inch diameter tube. Place in the refrigerator to set up for about an hour.

Once the butter is firm, you can slice it into 1/2 inch slices and top off your favorite steak or grilled fish. It's also great on fresh steamed asparagus or beets.

Here are 2 different variations

3/4 cup avocado mashed
1 tablespoon lemon juice
1/8 teaspoon salt
1/2 teaspoon onion powder
1/8 teaspoon garlic powder

Directions

Blend all ingredients till smooth. Keep refrigerated.

6 ounces ripe avocado meat, approximately 2 small avocados
1 tablespoon freshly squeezed lemon juice
2 ounces unsalted butter, softened
1 garlic clove, minced
1 tablespoon freshly chopped cilantro leaves
2 teaspoons ground cumin
Kosher salt and freshly ground black pepper

Peel and pit the avocados. Place all ingredients into the bowl of a food processor and process until well combined. Place mixture onto a sheet of parchment paper and shape into a log. Place in the refrigerator for 3 to 4 hours. Slice and serve with grilled fish or chicken.

Take an Avocado. Peel and pit it. Put it in a food processor. Bzzzzzzzzzz
Add butter, a little bit of mayo, some lemon, and maybe some red pepper flakes. I'd put a little sugar to cut the acid and round out the flavor. Bzzzzzzzzzz. Now I'm hungry.

It was just on TV Food Network.
Alton Brown did a whole show on avacados...even made cake frosting...I though that was a little over the top, but he did make avacado butter.
