Love said it succinctly. Here is what a grammar reference book of mine says:
The single dash is used to signal an abrupt change or shift (usually a downshift) in the progression of a thought, in tone, or in the level of diction or style.
Ex. He's the perfect companion-at least for now.
The hyphen is another form of a dash. The simple use of the hyphen is to divide a multisyllabic word that does not fit in its entirety at the end of a line of text.
Then there are examples as:
hand-me-downs, stir-crazy, long-distance-service, and under-the-table.
