No. Contrary to popular belief, ostriches do not bury their heads in the sand. If a predator threatens their nest, ostriches will lay their head against the sand to try to blend in with it.

Actually that is a myth.
It was thought that ostriches did that, but in reality they were foraging for food on the groung and often times their head would wing up in depressions, and it would appear as their head was in the ground

Yes they do and they think that because they can't see you, then you can't see them.
It's the same when playing peek-a-boo with a baby, same principle applies.
