J Lo argh please no, good recommendations!
Some spanish speaking bands I've heard that I like just so you know what kinda stuff I like...
The Plugz, Sekta Kore, Molotov, Brujeria, Ozomatli.

I'm learning Spanish at the moment so I'd like to listen to as much Spanish music as possible, hopefully some of it will sink in and help my Spanish speaking.

Ooh ooh!!! You've got to listen to Ska-P!! They're Spanish, not Latin American, but you'll love them!! They're wonderful!!!! I hope that my excessive use of exclamation marks makes you understand how much I love this band!!!!!!!!!!!!!!!!!!!!!!!!

(you can listen to clips on Amazon, listen to "Mestizaje" first, it's the most ska/punk song on that album, but all their songs are great--they're one of my favorite bands in any language. If you like your lyrics to actually mean something, you'll really like them. Pretty political, with a lot of smarmy sarcasm and satire. Great band [unfortunately they broke up a few months ago, though, but a few of the members have new bands they're working with].)

I like this band from the SF Bay Area called Orixa. They don't have sound clips on Amazon for them, but I think they do on their website: http://www.orixazone.com/
The song "Siembra" off the album Siembra is one of my favorite songs. You can listen to a clip/download it on iTunes.

One of my favorite groups ever (which doesn't really fit into your categories, but you might like them anyway) is Ojos de Brujo. They're usually called "nuevo flamenco" in style. They're kind of more towards the harder rock side.

Listen to "Siempre me quedará" and "Que nadie me levante la voz" (Don't worry, she's nothing like Shakira! I promise, I would never suggest anything like that!)

However, she pronounces her words very clearly, so if you're just learning Spanish, it might be a great album to listen to. You'll pick up all the words very easily.

Hip Hop - Control Machete, Molotov, BamBoo
Ska Punk - Genitallica, Panda, Los Pericos
Jazz - Jumbo, Cafe Tacuba (not quite jazz, but jazzy/mellow rock like Maroon 5)

All these bands are from Monterrey, Mexico, it's the epicenter of Mexican rock (best compared to Austin). If you like Latin Rock, and you ever get a chance, go there and try to catch some shows at Cafe Iguana.

If you want a bit of everything, try Manu Chao. The guy is French or should I say 'was', cos he's been wandering round Latin America for donkeys years now, and has no declared home, but this has made him a proliphic and broadminded artist.
One of his best achievements is perhaps the amazing latino accent he's got now! :-)
He has done some stuff with his former band Mano Negra which is also quite cool.

Try to listen something of "Mago de Oz" and "Tierra Santa" both of them are Spanish, they're metal (light metal) I also like "Sober" and "Avalanch". Another group I used to listen is "Heroes del Silencio". All I have told you are Spanish, I'm sorry I don't listen Latin American music...

And for ska music, of course "ska-p"...
