Sodium alginate is a seaweed extract, its not really crap. Its used as a thickener, like carrageenan or cornflour. Are you eating a lot of low fat stuff? Its often used in that to make youghurt seem thick and creamy.
Switch to more wholefoods and stop eating so much processed stuff.

Because people persist in buying them. I'm personally getting really pissed about high-fructose corn syrup. My husband is diabetic and this crap is in EVERYTHING.
But Sodium alginate is not an artificial flavouring - it doesn't really have much of a taste. It's for texture.

Because people are to lazy to cook food fresh nowdays. Sodium makes food taste better, and is a preservative., so food lasts longer on the shelves. Also Chemicle flavourings are cheeper to produce than fresh ingreedients.

Processed foods contain colouring to make them look like real food, flavouring to make them taste like real food and preservatives so they keep for a long time. They usually also contain fat and sugar because these satisfy your taste and are cheaper than selling you food.
Try buying real ingredients and make your own.

To make it taste better or last longer.
I know what you mean, there is so much rubbish in our food, but with people always demanding cheaper/more convenient food then it's always going to go this way

Most ingredients are preservatives.
Natural food ingredients have short shelf life.

All preservatives for a long shelf life. I don't like it either.
