If my childs dad was an ex con would that affect my chances of employment as a police officer?

Absolutely not! As long as you yourself were not a party to a crime, no government office would and may ever blame you for the misdeeds of somebody else (private people propably will!). What you are implying here was used by the German Nazis under Hitler and it was called "sippenhaft", meaning the whole family clan was held responsible for the misdeeds of one of their members! In the USA luckily there is no such "sippenhaft"! So, if you want to become a police officer, no matter in which state, I am sure you will be judged by your own qualifications and nothing else!
It's a different story, if you ever want to candidate for the office of the president of the USA! In that case even in the USA "sippenhaft" will be aplied, but again not by government officials, but by the voters!

if you are still engaged with a relationship with the child's father it may have some affect but if you are up front with the interviewer and the relationship is merely child swap (joint custody- visitation) then probably not.
