Zucchini Bread

2 cups shredded raw zucchini
3 eggs
1 3/4 cups sugar
1 cup vegetable oil
2 cups flour
1/4 teaspoon baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
2 teaspoons vanilla
1 cup chopped walnuts
PREPARATION:
Put zucchini in strainer and press or squeeze with hands to get excess liquid out. Beat eggs, sugar, and oil together. Add flour, baking powder, soda, cinnamon, salt, vanilla, and walnuts. Mix together by hand. Add drained zucchini. Mix well. Pour into 2 greased and floured loaf pans. Bake 55 to 65 minutes at 350°, or until a wooden pick or cake tester inserted in center comes out with very little cake clinging to it.

FRIED ZUCCHINI BLOSSOMS
Whether you pick blossoms from your garden or buy them at the farmers market, choose male flowers. The males — which don't produce a vegetable but exist to pollinate the females — are recognizable by their long, straight stems and the unmistakably male-looking stamen in the center of each blossom. Females swell at the base of the blossom, where the squash forms, and four little shoots make up the pistil inside. Some chefs like to fry female blossoms when the baby zucchini is just emerging and still attached, but Mexican and Italian purists wouldn't hear of it. Other chefs like to remove the stamen of the male flowers, but it isn’t necessary.
zucchini blossoms
2/3 cup all-purpose flour
3/4 cup beer or club soda
oil

Whisk flour into beer or soda to make batter.

Dip blossoms in batter to thinly coat.

Fry blossoms in a saucepan, 2 or 3 at a time, in 1 inch of hot (375°F) oil.

Drain on paper towels and season with salt.

This is how our family prepare the flowers.

* 18 zucchini flowers
* A pint (500 ml) whole milk
* 3 heaping tablespoons flour
* An egg, lightly beaten
* Salt
* Olive oil or lard, for frying

Trim the stems of the zucchini flowers, remove the pistils, wash them gently and pat them dry just as gently.

Prepare the batter with the milk, flour and egg. Heat the oil. Lightly salt the zucchini flowers, dredge them in the batter, and fry them until golden, then drain them on absorbent paper and serve them hot. They're fit for the Gods.

DOUBLE CHOCOLATE ZUCCHINI BREAD

2 sm. zucchini (about 1/2 lb. total) or 2 c. grated
4 c. flour
1/2 c. cocoa
1 1/2 c. sugar
1 tsp. baking soda
1/2 tsp. baking powder
3/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1 1/2 c. oil
3 eggs
1 1/2 c. milk
2 tsp. vanilla
1 c. semi-sweet chocolate chips

Heat oven to 350 degrees. Butter 2 (8 x 4) loaf pans.
Grate zucchini. In a large bowl, combine flour, cocoa, sugar, baking soda and powder, salt, cinnamon, and nutmeg. In another bowl, combine zucchini except the chocolate chips. Stir into dry ingredients until just blended. Stir in chocolate chips.

Pour batter into prepared pans. Bake until a toothpick stuck in the center of the bread comes out clean, about 1 hour 15 minutes. Cool on rack 10 minutes, then remove from pans and cool completely.

My whole family absolutely loves this.

Zucchini Bread

1 tsp. cinnamon
2 cups white sugar

3 cup flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder


Grate zucchini in blender. Beat by hand eggs, oil, vanilla, zucchini, cinnamon white sugar. Add remaining ingredients. Mix well. Pour into greased and floured loaf pans. Bake 350 degrees until toothpick inserted in the middle comes out clean.

Takes really good warm with butter or plain.

Zucchini Nut Loaf

1 cup grated zucchini squash
1 cup sugar
1 egg
¼ cup cooking oil
1 ½ cups flour
1 tsp. cinnamon
½ tsp baking soda
½ tsp. nutmeg
¼ tsp. baking powder
¼ tsp. finely shredded lemon peel
½ cups chopped walnuts

In bowl beat together zucchini, sugar, and egg. Add cooking oil, mix well. Stir together flour, cinnamon, baking soda, nutmeg, baking powder, and lemon peel. Stir into zucchini mixture. Fold in walnuts. Pour into a greased loaf pan. Bake at 350 degrees till done, 55 to 60 minutes. Cool in pan on rack for 10 minutes; remove from pan. Cool thoroughly on rack. Wrap and store overnight before slicing. Makes 1 loaf.

what I do is make an egg batter with butter milk , season my zucchini with salt & pepper and some ceorel seasonning. place corn meal or fish fry in another bowl . dip in batter then in fish fry and drop in grease .
