I am not a guy, but I wanted to answer the question anyway.
I would spend the day with you!
We would ride bicycles on the beautiful trails in the mountains near my home. We would have to hit one of the beautiful rivers, rent kayaks and explore areas around the river.
Then we would ride to a trendy ethnic or seafood restaurant enjoy a nice meal while drinking lots of lemony iced tea.
Of course we would hit a free concert in the park to listen to Jazz, classic rock or uplifting gospel.
We will ride the bikes back to my place and...
... round the evening off by sitting on my porch swing to solve the world's problems or play a rousing game of scrabble, maybe even rent a documentary...
