Mmmm... Mangoes... I love mangoes! You can tell that the mango is ripe when it is a little bit soft to the touch. It shouldn't have wrinkled skin.
Another way to know that a mango is ripe is when you smell it, it has a rich, fruity aroma to it. Then you have check the rear part of it if it has some little black streaks or spots. If there's too much black spots, the mango is overripe. If there's none, the mango is unripe.
Simply peel the outer layer of skin, and cut the fruit away from the hard pit in the middle of the fruit. It can then be eaten alone, added to smoothies, and even added to fish dishes.
Mangoes (preserved mangoes) are also available in big packs at BJ's. They're great for snack!

I think everyone else did a pretty good job of explaining how to tell when a mango is ripe, but I have a trick for preparing one:
Lay the mango on a cutting board (non-slip would be helpful) and cut away all four sides with a sharp knife. Keep in mind that there is a pit in the center, so you have to start your cuts a little to the right of center....rather than cutting straight down, cut at a bit of a curve. After you have all four sides cut away, grab a large spoon (a little bigger than what you would eat your cereal with). Simply slide spoon between mango meat and skin....sort of scooping it out. Works perfectly every time. Then, if you desire...slice in to smaller pieces. Mango is great with a bit of lime juice squeezed on it. It's also great in smoothies. Hope this helps!

WHITE CHOCOLATE & MANGO CAKE
Cake:
2 cups all-purpose flour
1 teaspoon salt
1-1/2 teaspoons baking powder
1/2 teaspoon ginger
1 cup white chocolate bits
2 tablespoons unsalted butter
3 eggs
1/2 cup heavy cream
1/2 cup unsweetened coconut milk
1/4 cup sugar
2-3 mangoes
Frosting:
1 8-oz block cream cheese, softened
1/2 cup unsweetened coconut milk
1/4 cup confectioner's sugar
1/ cup shredded coconut, sweetened
1 teaspoon vanilla
Cake:
Combine flour, salt, baking powder and ginger in a mixing bowl. Set aside. In a double broiler, over a low flame, melt white chocolate bits with butter. Add eggs, cream, coconut milk, and sugar. Stir occasionally over low flame until mixture is smooth and creamy. Add to dry ingredients, and stir until well-combined. Add mangoes, and gently fold until just mixed. Bake in a greased or lined 9"-13" loaf pan in a preheated oven at 350°F for about 1 hour, or until a toothpick inserted in the center comes out clean.
Frosting:
Beat cream cheese and coconut milk together, by hand or with an electric mixer, until they come together. Add confectioners sugar, shredded coconut, and vanilla, and continue to beat until soft peaks form.
Let cake cool and dry at least 1 hour. Frost the top and sides of cake with creamy coconut frosting. Garnish with extra coconut and/or fresh mango slices, if desired.
Serve with a sweet tropical drink, such as pina colada.

I love my mangos with dried pepper flakes and a bit of fish sauce. They counter the sweetness of the mangos.

I prefer my mangos to be fairly soft. I like to peel it and slice it from the pit. Then eat the chunks.
The mango cake recipe looks great. I will make it tomrrow. YUMMY!!
