Mandarin Beef

2 tablespoons reduced sodium soy sauce
1 clove garlic, minced
1/2 teaspoon sugar
1/4-1/2 teaspoon dried hot peppers
1/8 teaspoon ginger, ground
1/2 lb boneless beef sirloin, cut in thick strips
2 tablespoons vegetable oil
1 (8 ounce) can bamboo shoots, rinsed, drained, and cut into julienne strips
1 medium green pepper, cut into 1/4-inch strips
1/2 cup carrots, shredded
1/3 cup green onions, sliced
2 cups rice, cooked

In a small bowl, combine all marinade ingredients; mix well.
Add beef, stirring to coat. Cover. Marinate at room temperature for 15 minutes.
In a 10-inch skillet, heat oil over medium heat. Add beef and marinade, and stir-fry until meat is no longer pink.
Remove meat from skillet; set aside. Add vegetables. Stir-fry until tender-crisp.
Return beef to skillet. Stir-fry until heated.

Chinese Beef and Broccoli

1 lb flank steak
2 tablespoons soy sauce
1 tablespoon dry sherry
1/2 teaspoon cornstarch
1 package frozen broccoli, defrosted
1 clove garlic, minced
1 slice fresh ginger, finely minced
2 tablespoons peanut oil
salt

Slice the steak against the grain into very thin slices.
Combine the soy sauce, sherry, and cornstarch and pour this mixture over the steak.
Marinate the meat for 15 minutes.
While the meat is marinating, slice the broccoli at a diagonal and mince garlic and ginger.
Heat a wok or large frying pan for 30 seconds, add oil, wait about 20 seconds, and add minced garlic and ginger root. Fry over high heat, stirring constantly for about 20 seconds more, then add the beef.
Stir-fry, stirring constantly, for about 1 minute. Add broccoli and stir-fry for another 4 to 6 minutes, until the broccoli is cooked but still crisp and still dark green.
Serve hot.

Mmm, one of my favorite Asian dishes! Here's a couple different variations

Mandarin Stir Fry

Ingredients

8 oz beef top sirloin or top round steak, cut into bite-sized strips
1/4 cup tangerine juice (1 to 2 tangerines)
2 Tbsp Hoisin sauce or oyster sauce
1 Tbsp lite soy sauce
2 cloves garlic, minced
1/2 cup low-sodium chicken or beef broth
1 1/2 cup broccoli flowerets
1/3 cup green onion, sliced
4 cups Chinese or Napa cabbage, sliced
1 8-oz can sliced water chestnuts, drained
2 tangerines, peeled, segmented
hot cooked rice
Directions

Remove any excess fat from steak strips; place in a shallow non-metal dish. In a small bowl, stir together tangerine juice, Hoisin sauce, soy sauce, and garlic. Pour mixture over meat; toss to coat. Cover, and chill 30 minutes to several hours.

Drain meat, reserving marinade. In a wok or large skillet over high heat, place 3 Tbsp broth. Stir fry broccoli 3 minutes. Remove from wok. Add more broth if needed; stir fry onion and cabbage for 2 minutes. Remove from wok. Add more broth if needed; stir fry water chestnuts and tangerines for 1 minute. Add meat and cooked vegetables back to wok, along with reserved marinade. Toss well; cover and heat 1 minute.

Serve with hot rice, cooked in unsalted water.

Broccoli flowers are a pleasant contrast to flank steak strips in this delicious, easy Chinese dish. Put meat in freezer for several minutes to firm. Cut firm meat across grain into 1/4 inch slices. Rinse broccoli. Cut flowers from stalks. Cut stalks into 1/4 inch slices. Combine 2 teaspoons sherry, 1/8 teaspoon pepper, 2 teaspoons soy sauce, 1/2 teaspoon salt, 1/2 teaspoon sugar, and 1/2 cup water in bowl. Heat 2 tablespoons oil in heavy skillet or electric fry pan set at 360 degrees. Add broccoli stalk slices. Cover skillet and shake. Cook 2 minutes. Add broccoli flowers. Cover and shake, cook 2 more minutes. Broccoli should be crisp/tender. Place broccoli on hot platter. Place remaining 2 tablespoons oil in hot skillet. Add sliced meat. Brown quickly on both sides. Pour in soy sauce/sherry mixture. Cook 2 minutes, covered. Add cooked broccoli. Combine 1/4 cup water and 2 teaspoons cornstarch. Add to meat, stir, bring to boil.
