Does anyone here know how to store beets? Do you cut the tops off first and how? And also how long can they be stored for? When you cook them are you supposed to cut the tops off?

Thanks, any help is appreciated.

Beets are a tender root crop. They need to be stored in the refrigerator in the crisper drawer. The leaves are usually cut off when you purchase them but if not cut down to where you just have the stems showing. You can slice beets with the tops off and cook them with a little water in a covered pan, drain and add butter and salt and pepper. You can pressure can beets, so you have canned beets or pickle them and hot water bath them. The Better Homes and Garden cookbooks tell you how to cook them and can them. Beets will last in the crisper for about 7-10 days fresh. Do not freeze!

Cut the tops of and wash the greens! They are really yummy! Sometimes I chop a beet into fairly small pieces and fry in olive oil and salt, let cool, then add beets with oil to the greens. Honestly, this salad is SO SWEET and good that my roommate (who doesn't like anything) was gobbling it up beofre I could make another batch. Beets last a long time. put them in the crisper. I also shred beets on top of salads, mix with shredded carrots, make borsht...!

Yea, cut most of the green off, and keep it stored in a cool dry place.

Store them in a cool, dark place as they are and only when you need them do you peel them. They can store for up to a year.
