You can marinate or not fillets using whatever you want. If not, put some salt, pepper, ginger and onion in the fillet. Cut pieces of aluminum foil, put one fillet in the middle of the foil and pour some butter, close the foil folding the ends and make sure its sealed by all ends.
Put the fillets one by one directly over a skillet and let it each one cook, the hot juices and steam will cook quickly the fillet. You know when it is done, ‘cos the foil will be puffed (let it stand like that for a while, just to make sure they will cook well).
You can change using this same recipe if you have more time, just putting some vegetables, mussels, prawns and let the "puffs" in the oven or over stones on a fireplace on the beach. Let them cook well using extra strong aluminum foil.

Unlike most answers so far this is serious.. !
"Most" fish will cook in under 2 mins. I suggest a salad and Tuna Steaks..Make the Salad and leave in the fridge.. Cook the Tuna Steaks.in a hot frying pan with a little Olive oil, 2 mins either side (I did say most Fish 2 mins.) until it is pink in the middle, looking from the side... remove from the heat..... serve with the salad and Mayo, also if you want add some freshly boiled new potatoes....

Get some tilapia fillets. Thaw fillets. (Thawing is not absolutely necessary --- frozen fish just takes a little longer. If you start cooking with frozen, it may take as much as 10 minutes.)
Heat oil in pan. (This can be any vegetable oil --- even olive oil. I use about 2 tablespoons for 4 fillets.) Add fish to hot oil. Season with Old Bay seasoning. After 3-4 minutes, flip over fillets and season the other side of the fish. Cook for your own desired degree of doneness. (I like my fish well done.)
For variety, you can add fresh or canned mushrooms to the fish while cooking. If the Old Bay is not salty enough for you, add a dash of soy sauce to the pan. Serve over rice or with mac & cheese. Yum!

I don't know about 5 minutes of cooking time. You might want to just sear it, then. This is the shortest cooking time I came up with:
ED'S FAST GRILLED FISH
1 lb. fish of your choice (whole trout, fillet of sole, cod, etc.)
2 tbsp. butter
4 oz. plain Italian dressing
1/2 sm. chopped onion
Dash garlic salt
Dash pepper
Make a boat out of tin foil to hold the fish and make sure there is enough foil to seal the boat. Place fish in boat and all all other ingredients. Broil over grill about 15 minutes. Check to see if dressing is boiling. When fish flakes, it is cooked.

Boil some fancy rotinni noodles. Rinse and cool. Meanwhile, thaw two packages of that fake crabmeat or lobster, (which is really cod) under water and flake into the noodles. Add enough Miracle Whip salad dressing to just moisten with some lemon jc. Add cherry tomatoes halved, some chopped onion, bell pepper or small florets of broccoli and you have a great seafood pasta salad. You can add half a package of dry Ranch dressing mix to spice it up or some regular salad dressing.

I love fish and this is very quick, if you like finnan haddock [yellow fish]. Cook the fish in a pan of milk,don't take long. Meanwhile make an omlette with 3 eggs, when omlette is ready flake the fish over the top and grill for a few moments. Tasty.

Fish Stew Recipe

Preparation time: 25 minutes. Dad's been making this soup for several years now. It is incredibly easy to make, given how tasty the results. The key ingredient is the clam juice, though I have prepared it for people with shellfish allergies substituting the clam juice with white wine, fish stock, or water. It works, just not quite as tasty. Works well with white fish, I've used cod, tilapia, sole with good results.
6 Tbsp olive oil
1 cup of chopped onions
2 large garlic cloves, chopped
2/3 cup fresh parsley, chopped
1 cup of fresh chopped tomato (about 1 medium sized tomato)
8 oz of clam juice (or shellfish stock)
2/3 cup dry white wine
1 1/2 lb fish fillets (use halibut, cod, sole, sea bass, shark, orange roughy), cut into 2-inch pieces
Touch of dry oregano, Tabasco, thyme, pepper
2 tsp of tomato paste.
1 Heat olive oil in heavy large pot or Dutch oven over medium-high heat. Add chopped onion and garlic and sauté 4 minutes. Add parsley and stir 2 minutes. Add tomato, tomato paste and cook 2 minutes longer.
2 Add clam juice, dry white wine, and fish and simmer until fish is cooked through, less than 10 minutes. Add seasoning. Ladle into bowls and serve.

Using fillets, minced shallots, lemon juice, white wine, butter, dip fish in bread crumbs season w/ s& p and top with the rest of the ingredients. Place in hot hot oven center rack, depending on the size of the fillet 5 minutes should be good to go.

salmon fillets, microwaved - 2 mins, cous cous, boil water - 3 mins to soak, chop red onion and mixed peppers really small and shove in cous cous, a dash of this and that (helbs and spices etc) freshly ground pepper, pack of salad from waitrose with a french dressing and bobs your uncle. 5 mins tops the whole lot.

Do what I am doing at the moment Tesco's Kippers in the Microwave (5 Mns) and butter some bread, I do have to try not to breath to heavely tomorrow but wada ....
