My fav salad is with spinach/mixed greens (fresh not bagged), grapes, feta cheese, nuts (any kind that happen to be in my pantry), and rasberry vinegrette. The great thing about salads is you can add anything you want and they turn out wonderful! The rasberry vinegrette is a wonderful dressing for salads that come with meals like a roast and with red wine.

There are some bagged salad toppers at Wal Mart by the salad ingredients that have all the nuts, fruits, etc. already in them and they are very good with your vinegrette and require no work on your part. Just sprinkle on your mixed baby greens and you can impress even the inlaws!!

Raspberry vinegrette is wonderful on a spinach/mixed greens salad with fresh mushrooms and fresh strawberries or with fresh mushrooms, plum tomatoes, shredded carrots and gorganzola cheese.

Buy some mixed greens or baby spinach, add some toasted almond, and some dried fruit like craisins, or raisins, or and mix in some crumble goat cheese or blue cheese. I dont like blue cheese. This is a popular blended slad that goes with the raspberry vin.

Whisk some Dijon mustard with your raspberry vinaigrette add some salt and pepper. Adjust it to your taste and emulsify with extra virgin olive oil.

Salad - baby spinach, blueberries, walnut and some slices of chicken. Add blue cheese if desired. Toss with your dressing. Enjoy!
