Walnut Buttermilk Pancakes Topped With
Caramelized Apples and Almond Whipped Cream
Sift Together the Following:

1 C. flour

4 T. buttermilk powder

2 T. sugar

1 t. baking powder

1/2 t. baking soda

1/4 t. salt

Add 1/2 C. finely chopped walnuts to the dry mix.

Mix the Following in a Separate Bowl:

1 C. water

1 egg

1 T. walnut oil

Mix wet and dry pancake ingredients and cook on hot griddle - 1/4 cup per pancake.

Saute:

3 green cooking apples, peeled and sliced

4 T. butter

1 1/4 C. brown sugar

1/4 t. nutmeg

1 t. lemon juice

1/2 t. vanilla

Saute the apples until golden brown. Add the brown sugar and nutmeg; stir until it liquefies. Add the lemon juice and vanilla. Keep warm in an 140°F. oven.

Almond Whipped Cream

Whip 1/2 pint of heavy cream and add 1/3 cup confectioner's sugar and 1 teaspoon almond extract and whip until well blended. Hold in refrigerator.

Fan out three pancakes on a plate, spoon over generous amount of apples, then generous amount of whipped cream. Sprinkle with 1/2 teaspoon chopped walnuts.

I like to keep it simple.

I use Bisquick. I substitute with buttermilk twice the amount of milk called for.

For variety, I'll add fresh blueberries, or top finished pancakes with strawberries and whipped cream.

This leaves 1 bowl, 1 fork, 1 spatula and 1 griddle to clean.

I have been baking all of my life...and I usually don't measure things like pancakes (cakes and other stuff is MUCH different!). But, I'll try...
1 c flour
1/4 t baking soda
1/3 t baking powder
1 egg
1 c milk - this is a basic, fluffy pancake recipe
I then add vanilla or almond extract, depending on what I'm making.
My favorite are my apple pancakes...I thinly slice apples, then I pour a small amount of batter into the pan in a circle, place apple on top, then cover with more batter. Yum.
You can also make cinnamon pancakes with this...or make these pancakes w/ vanilla extract, mash up bananas with a little bit of lemon juice and powdered sugar, add roughly chopped walnuts or pecans.Then, place between two pancakes, pour on your favorite syrup and enjoy.

Definately chocolate chip pancakes and to make them you can just add chocolate chips to your recipe it should work fine lol maybe minus the walnuts if that'll be too much with the chocolate and add some whipped cream on top!
