Thank you for this question. I've never thought about it until now. Yes, when you eat your own kind it is cannibalism (I'm referring to bacon and ham on the bone.)
Italian sausage has many origins. Many are Italian pigs. However, there are also Italian sausages made from deer meat and even lamb/sheep.
