Mayonnaise

1 c Salad oil
1 Egg
-=OR=-
2 Egg yolks
2 tb Lemon juice
-=OR=-
2 tb Vinegar
Salt and pepper
Paprika

Beat egg or egg yolks with a rotary beater until
slightly thick; add 1 teaspoon oil at a time
beating well after each addition, until 1/3 cup
has been added. Add a few drops lemon or vinegar.
The mixture should be quite thick and perfectly
smooth. If it isn't you added the oil too quick or
didn't beat it enough. Continue to add the oil and
acid alternately until it's used up. Add
seasonings to taste. Store covered in the
refrigerator.

Try making this at least once in our life. It's so much better than store bought.

Mayonnaise Recipe

Ingredients
3 egg yolks
1 tb lemon juice or vinegar
1 1/2 cup olive oil
1/4 tsp dry mustard
Salt and pepper

Step 1: Beat egg yolks in a bowl for 2 minutes.

Step 2: Add lemon juice or vinegar, mustard and salt. Beat for 30 seconds.

Step 3: Add olive oil very slowly with a teaspoon. Keep on beating the mixture. Every 10 seconds, stop pouring the oil but continue to beat. Beat until the sauce has thickened. Keep the remaining olive oil aside.

Step 4: When the mayonnaise is thick, add a drop of lemon juice or vinegar. Then add the remaining olive oil. Continue to beat for a few seconds.

Step 5: Serve immediately or cover the bowl very closely.

2 egg yolks
1 cup of canola oil (olive oil will work, but the end result will taste oily)
1 teaspoon of dijon mustard

Combine egg yolks and mustard in a bowl. Very slowly, add a small amount of the canola oil to the mixture in the bowl. Rapidly whisk the canola oil into the yolk/mustard mixture until the oil is completely incorporated. Once you have the emulsion (it should look like mayonnaise, and not be separating), slowly add the remaining canola oil into the bowl, whisking rapidly.

If you got the emulsion right off the bat, before adding more oil, you should now have a bowl of your very own homemade mayonnaise. Add salt to taste and store in a mason jar. This mayonnaise will keep for up to 5 days.

Put in a blender 1 or 2 eggs (depends on the amount to make), add salt, pepper, half spoon of mustard and a squeeze of lemon. Put the cover on the blender and turn it on. Now while the blender is running pour through the hole in the cover a steady stream of cooking oil. Very slowly. It is done (stop pouring the oil and turn it off) when the mayonnaise starts to have the consistency of regular bought product

look it up online, but it's really only vegetable oil and raw eggs. FoodTV.com should have some; I see Emeril making some all the time.
