I have noticed this too. I am not French, but have several bony French acquaintances and I've visited Paris, does that count?

Several things I noticed:
Portions are of very rich food but *small*! Typically: a small wedge of cheese, some fruit, a small piece of meat with cream sauce, a small pastry, a glass of wine or strong coffee.

They do not eat all you can eat buffets and entire pepperoni pizzas with double cheese like Americans do!

They don't seem to snack in between meals.

People walk everywhere, all the time. Or ride bikes. They walk their small dogs, who are also tend to be wiry.

The French smoke like chimneys, everywhere, all the time. And smokers eat less!

One of the secrets is... the wine!

After each (main) meal, every French uses to drink a glass of natural
wine. The alcohol contained in the wine reduces the cholesterol levels.
Of course, I'm talking about wines coming from the famous French
vineyards...

Europeans in general eat smaller portions at meal times. They tend to prepare more of their own food than Americans do. They have a better, more balanced diet than Americans do. They limit their intake of red meat and eat more fish. They don't eat fast food every day or week or even month. They drink more water; sodas are a rare treat. Europeans walk & bike more than Americans; you can live in most European cities without a car.

If you did this, you would be very healthy; I did and I can eat just about anything in small portions. I walk 30 minutes a day and I am in good shape.

french food is very light and their meals and portions are much smaller than in america. also their cooking is healthier. they have bigger breakfasts and smaller dinners, which makes sense - in america we have small breakfasts and big dinners, but since the french eat bigger in the morning they use that fuel for the whole day, while americans eat a big dinner at night and don't burn it off. also, french people take a lot more pride in their appearance and health than americans do and hold themselves to a higher standard. they are very honest with themselves and with eachother.

I JUST CAME BACK FROM THERE haha ... well they walk EVERYWHERE ... and their portion sizes are MUCH smaller than anywhere else I've traveled. the younger generations are as health crazy as we are, but the older ones stay thin by moving around often and only driving when they have to (they even take stairs!!!) ... they eat everything and dont deny themselves anything, but they cut it all down

Most French people walk to get where they need to go. Why can't we be more like the French?
