I use seasoned salt, it is already flavored and is great for baked chicken, it gives it a nice crispy skin and full of flavor

BAKED PARMESAN CHICKEN LEGS
2 c. dry bread crumbs
2/3 c. grated Parmesan cheese
1/2 tsp. ground oregano
1/2 tsp. pepper
Salt to taste
1 clove garlic, minced
1 1/2 c. melted butter
12 chicken legs or thighs
Combine crumbs, cheese, oregano, pepper and salt and set aside. Lightly saute garlic in 2 tablespoons butter. Stir in remaining butter. Dip each piece of chicken in butter and then in bread crumb mixture. Place chicken in long shallow pan. Sprinkle remaining bread crumbs and butter over chicken. Bake at 350 degrees for 55 minutes or until golden brown. Serves 12

Dip the chicken in olive oil and season with salt pepper, granulated garlic, granulated onion, paprika, and roast in oven at 450 degrees, The hot oven will brown the chicken and help the chicken absorb the flavor.

Dry rub!!
Use:
4 teaspoons sugar (white or better yet brown)
1 teaspoon salt
2 teaspoons pepper
3 teaspoons chili powder
1 teaspoon italian herb (like basil or oregano or whatever you have)
Rub all over and bake normally. Low cal and Deee-licious!

If you are keeping the skin put lots of salt on them it will make the skin crunchy. I always cover them with butter, add an abundant quantity of general purpose seasoning chunks of onion and squeeze an orange.

I use salad dressing: Italian, french, catalina, or whatever you prefer. Baste the legs after they are browned, for about the last 10-15 minutes.
