I believe it is a butchering of "crudités" (croo-dee-tay), which is a French word for a raw vegetable platter, basically.

crudities are crunchy appetizers, usually in the form of a raw veggie platter. The boring way is to dip those baby carrots in ranch dressing...more creative way might be to top zucchini rounds with a dab of lemony hummus and half a greek olive.

Well, I have seen it spelled crudite. (Same pronounciatin though.) It is nothing more than a selection of cut up raw vegetables.
