OLGA's PIE CRUST
4 cups flour
1 Tablespoon sugar
2 teaspoons salt
1 3/4 cup Crisco Shortening
1/2 cup cold water
1 Tablespoon vinegar
1 egg
Stir the flour, sugar and salt together in a medium size bowl. With a pastry blender, cut in the shortening until the mixture resembles coarse crumbs. In a small bowl beat together water, vinegar and egg. Add to flour mixture until the dough comes together. Gently gather dough particles together into a ball. Wrap in plastic, and chill for at least 30 minutes. Divide into 4 balls. Lightly flour sides of the ball and roll out on lightly floured board or pastry cloth. Makes two 9-inch double-crust pies. Note: Dough can be refrigerator up to 3 days. It can be frozen until ready to use; thaw until soft enough to roll.

6 cups Cortland apples
2 tablespoons lemon juice
1/2 cup sugar
1/4 cup brown sugar
1 teaspoon cinnamon
dash nutmeg
dash salt
1/4 cup flour
2 Tablespoons butter
Wash, peel, core and slice apples, toss apple slices in a large bowl with lemon juice to prevent darkening. In a small bowl combine sugar, brown sugar, cinnamon, nutmeg, salt, flour. Pour over apple slices and stir to mix well. Arrange apple slices in pastry-lined pie pan. Dot with butter and place top crust on pie, seal and flute edges. Cut slits in the top to permit steam to escape. Bake at 450 degrees for 15 minutes. Continue baking at 350 degrees for 45 to 50 minutes or until apples test soft with a fork and the crust is golden brown. Note: Place a cookie sheet covered with aluminum foil on lower rack in oven to catch drippings.

Sinful Apple Pie Recipe
A nice HOUSE WARMING GIFT! Serve with vanilla ice cream. My choice of apples are granny smiths but use what you like. You can also add 1/4 cup rum soaked raisins to the filling.
2 prepared pie crusts
6 cups apples, sliced and peeled
3/4 cup sugar
2 tablespoons flour
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon ground cardamom
1/4 teaspoon salt
1 tablespoon lemon juice
2 tablespoons butter
1/4 teaspoon sugar
8 servings

1. Heat oven to 425 degrees.
2. In a large bowl combine all ingredients except crust, butter and 1/4 teaspoon sugar.
3. Place 1 crust into a 9 inch pie dish.
4. Fill with apple mixture.
5. Dot with butter.
6. Place second layer over filling and fold edges under bottom and pinch them together.
7. Cut slits in a couple place on top.
8. Brush with water and sprinkle with sugar.
9. Bake at 425 for 40- 50 minutes.
10. or untill apples are tender and crust is golden brown.

I make this one when I don't have time to make crust. It is very easy and very good. My family loves it. It is called Deep Dish Apple Pie. 6 apples peeled and chopped into a pie plate 1 TBS sugar 1 TBS cinnamon sprinkle over the apples Melt 1 1/2 sticks butter or margarine Mix into butter: 1 cup sugar 1 cup flour 1 egg Pour over the apples evenly ( it fills in around the apples as it cooks) Bake at 350 for 45 min until crust starts to brown This is not your traditional pie pastry crust. It is more of a cakey batter topping that is absolutely yummy.

Buy a frozen pie shell and top. Peel 6 baking type apples and slice into 12 wedges. AS you peel and slice toss apples in 3 tablespoons of lemon juice so the apples do not discolor. Mix apples with 1 cup granulated sugar that has been mixed with 2 teaspoons of Cinnamon. Place the apples in pie plate and put the top pie crust on top. Using a fork press the top and bottom of pie at the edge, this Willl keep them together. Brush the top with a beaten egg, let rest and bush it with the egg wash again. Bake in a 400 degree oven until brown, the liquid from the apples wil be oozing out the side.

Here are two really simple ones

Take a sheet of unbaked pie crust. roll out and place on a round pizza mold...Peel & cut 2 or 3 small apples in thin slices, place on the crust forming a round design. .. Mix 3 tablespoons of sugar in a bowl with 1 teaspoon of cinnamon and 1/4 teaspoon of nutmeg. Sprinkle generously all over the apples. Bake until the apples are soft and slightly browned. Serve with a scoop of vanilla ice cream and a drizzle of raspberry jelly over it.

TARTE TATIN (upside down pie)
Take one lb. or more of apples...golden delicious or granny smith (for more tart flavour)
Peel and cut each in 6 wedges
Take a high cake mold (the type you can remove the bottom from) grease the bottom with butter then put pieces of butter on this (about 2 ounces) then sprinkle with 3-4 tablespoons of sugar. Now put the apple wedges on top of the sugar... Make sure the bottom is well covered..leave no "holes" (break the apple wedges to fit in these).
Cook in a moderate oven (about 325º) for 15 minutes, this is so the sugar will caramelize.
Remove from the oven, Now roll out your pie crust to fit the mold. Place ON TOP of the apples. Put back into the oven for another 15 to 20 minutes (you'll see when it's done, the crust should be golden brown.)
Remove from the oven, take the outer part off the mold...put your serving plate on top of the crust, and turn your pie over to serve.
This is really delicious, and is even better if served still warm! (Add whipped cream or ice cream if you like)

Yep! You will love this one too!

First of all, I never peel my apples. I wash, slice, take out core with seeds and stem, then slice into an unbaked pie-shell. Continue this until you have filled just up to the brim. Sprinkle with 2 or 3 tablespoons of Chrstal Light Lemonade (sugar free.) Then, add spices, nutmeg (easy on this one), cinn, salt. Add about 1/4 cup flour, sprinkled evenly over the apples. Put on the top crust, slice on top crust to vent steam, bake 375 for 45 minutes to an hour, or until nice and brown.

Enjoy! Yummy and lower in calories than most!

A 2-crust apple pie with brwn sugar, cinnamon, and other ingredients.
INGREDIENTS:
4 large cooking apples, about 2 pounds (to make 6 cups sliced apples)
1 tablespoon lemon juice
2/3 cup granulated sugar
1/2 cup light brown sugar, firmly packed
3 tablespoons flour
1 teaspoon ground cinnamon
dash nutmeg
dash allspice or ground cloves
pastry for 2-crust 9-inch pie
2 tablespoons butter
PREPARATION:
Peel, quarter, and core apples; cut into 1/4-inch slices (should have 6 cups). Toss with the lemon juice in a bowl.
In a separate bowl, combine granulated sugar, brown sugar, flour, cinnamon, nutmeg, and ground cloves; pour over the apples and toss to coat.

Prepare pastry.

Roll half of pie pastry to a 12 inch circle on a lightly floured surface. Fit pastry into a 9-inch pie plate; trim overhang to 1/2 inch.
Spoon apples into the prepared pastry shell; cut butter into very small pieces and sprinkle over the apples.

Roll out remaining pastry to an 11-inch circle. Cut several slits in pastry to allow steam to escape. Cover pie and trim overhang to 1/2-inch. Turn edges under flush with the rim; flute all around to make a stand-up edge.

Bake pie at 425° for 40 minutes, or until top is golden brown and juices are bubbling up. Cool on wire rack.

you can buy ready-made pie crusts in the freezer section. take a 9 inch pie plate, peel and slice 6 large apples....Braeburn is my fave for pies....add 1 cup sugar, 2 tbsp cinnamon, 1 tsp allspice, dash of nutmeg, 5 tbsp flour and sift together and sprinkle over apples add 4 pats of butter...seal in the crust, bake at 350 F for about an hour......serve warm with french vanilla ice cream...that's the best!
