I hate turning the oven/stove on in this heat. Does anyone have any recipes that don't require cooking? I have a no bake veggie pizza but that's the only one I have. Thanks.

Here's a great dessert that doesn't require any cooking:

Strawberry Angel Food Cake

1 storebought Angel Food cake, torn into bite sized pieces
1 (8oz.) package no fat cream cheese, softened
1 (12 oz.) container light whipped cream
2/3 cup powdered sugar
2 lbs. fresh strawberries, sliced

With electric mixer, mix together the cream cheese, whipped cream and powdered sugar.

In a large clear glass bowl, layer half of the cake, spread half of the cream cheese mixure over that, then half of the strawberries. Repeat layers, ending with strawberries.

Chill until ready to serve.

LOBSTER SALAD DIJON

1 lb. imitation lobster meat
4 tbsp. celery, chopped
4 tbsp. green onions, chopped
3 tbsp. parsley, chopped
1/2 red Bell pepper, chopped
2 c. red leaf lettuce, torn in bite size pieces
1 1/2 tbsp. lemon pepper
1 tbsp. dried basil leaves
3 tbsp. Dijon mustard
2 tbsp. salad dressing I

In large salad bowl, place lobster meat. Use a large fork to separate meat. Add all the remaining ingredients with the exception of the salad dressing. Chill in the refrigerator for at least 1 to 2 hours. Before serving, add dressing and toss well.

Make a grilled chicken caesar salad - buy the chicken strips already cooked in the meat section - romaine, roma tomatoes, cukes, shredded cheese, caesar dressing and or home made ranch dressing.
Your can season the meat and nuke it for a minute or 2 and add to the salad.
It's my summer meal on hot days - but I usually marinade and grill a pkg of chicken breasts and store in the fridge or freezer until I'm ready to use.

SPEEDY GAZPACHO
Fire-roasted salsa adds depth of flavor to this fat-free soup; it can usually be found in the supermarket deli case.

1 English hothouse cucumber (about 12 ounces), peeled, cut into large chunks
1 large red bell pepper (about 8 ounces), halved, seeded, cut into chunks
2 cups (or more) bottled tomato juice
1 14 1/2-ounce can diced tomatoes in juice
1 12 1/2-ounce container refrigerated fire-roasted tomato salsa
1 cup roasted red peppers from jar
1/2 cup coarsely chopped fresh cilantro
2 tablespoons red wine vinegar



Working in 2 batches and using on/off turns, finely chop cucumber and bell pepper in processor. Add 2 cups tomato juice and remaining ingredients; blend to coarse puree. Season to taste with salt. Transfer to bowl. Cover and chill 2 hours for flavors to develop. Mix in more tomato juice by 1/4 cupfuls if too spicy.

Makes 6 to 8 servings.

Try chopping every veggy and green you have in the fridge into a nise salad and add cold cuts to it. you can also add some fruit, but better just one type per salad.

Drink lots of fresh-fruit blended drinks. Be sure your blender can crush ice, otherwise you'll destroy the blades and motor.
