Baking soda is a levening agent, if you don't use it, your cookies will be flat and hard. Not good.

The cookies won't rise properly...if you are using an all-purpose flour you should be able to leave out the baking soad and salt, though.

yes you can leave it out. I do it all the time and my cookies come out fine. I was told it helps with the rising.

no you need the baking soda--however you could substitute baking powder--baking soda spreads --baking powder poofs

use self-rising flour not all purpose flour, no need for the salt and baking soda then....
