i dont want the one from the other internet sites, i wanty to know the moist gujarathi ghatias? . does any one has thier home recipees

GHATHIA
Ingredients :
1/2 kg. Wheat Flour
11/2 cups. Water
1 1/2 tsp. Ajwain
2 tbsp.. Oil
Oil for frying As required
Salt according to taste
Preparation :
Method 1.Sieve the wheat flour and rub the oil into it.Then add the salt, Ajwain and mix well. Make a well in the center, add enough water and knead into a stiff dough. Heat oil in a kadhai, to smoking point. Roll out the dough into big size Chapati and cut it into long strips. Now put these long strips into the hot oil. Remove from the oil when crisp and golden brown in color. Drain on tissue paper , cool and store in airtight containers.

Chakli ( Spicy crunchy spirals)

Ingredients
2 cups rice flour
� cup Mungdal paste
2 teaspoon oil
� teaspoon turmeric
� teaspoon carom seeds (ajwain) or cumin seeds
1 teaspoon red chili powder (optional)
salt to taste
oil for frying water as required

Method:
Cook the mungdal to a paste like consistency
In a big bowl add rice flour, mungdal paste, turmeric, salt, chili powder, carom seeds or cumin seeds. Mix lightly. Heat oil and add the sizzling hot oil to the rice flour mix. Add water as needed to make a stiff dough. Knead thoroughly with hand not food processor.
Take a lemon size dough and place it in a chakli mould or icing bag with star nozzle. Heat oil for frying. Test the oil by dropping a small piece of dough and wait for 3 seconds if it does not rise to the top then oil needs to be heated. Gently make a spiral with the chakli mould or icing bag and deep fry to a golden brown.

Cool completely before storing in an airtight container.

aorry i dont but i do know what it is,,, i think you should ask some indian sweet providors as they will be more that happy to give you an authentic classical recipe
