I can sympathsize with that! For a while I was eating too much pasta because I couldn't afford anything else!

Iced tea

6 regular tea bags (I use Lipton)
1 herbal tea bag (My preference here is Tension Tamer, but others will work well too)
1 sprig mint
3/4 cups sugar
dash cinnamon
a quart or more of water

Bring the water to a boil, then turn off the heat and dump in the other ingredients. Let steep for about half an hour, more or less. Strain out the mint and teabags, and put your tea into a gallon container with enough cold water to make a gallon. Or use ice, if you're in a hurry to chill the tea down.

Stir-fried vegetables

1 onion, sliced
1 squash, sliced
1 stalk celery, sliced
1 bell pepper, diced
optional additions: red or green peppers, hot peppers, mushrooms, eggplant, or zuchinni
salt and pepper to taste, garlic, chives, tarragon, basil, and oregano

In a skillet melt shortenning or butter, or some combination thereof. Add your vegetables and seasonings, then stir until the vegetables get a hint of transparency in them. Serve as a side, or over pasta. This recipe is extremely flexible, so experiment!

For a desert or snack, try a batter like pancakes but thinner. While the cakes are frying, in another pan heat together syrup, honey, nuts, and a hint of peanut butter. It's rich, but very tasty!

If you've been making a lot of hamburger helper you probably want something less casserole style. I would reccommend the following simple menu as a starter.

Roast chicken with potatoes and carrots.

Ingredients
1 whole chicken (5-6 lbs)
1/4 cup vegetable oil
2 Tbsp flour
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme leaves
2 lbs red skinned potatoes, washed
1 lb baby carrots, washed

Heat oven to 350 F. Open up chicken package and drain juices and throw away the stuff inside it. (These things do have uses but since you seem to want simple stuff just chuck it out) Mix up oil, flour, garlic, salt, pepper, and thyme. Brush mixture on chicken. Place chicken on roasting pan on rack. You can use a cookie sheet if that's all you've got and construct a rack out of celery sticks or onion slices, the point is to lift the chicken out of it's juices. Put the chicken in the oven and cook 1/2 hour. Open oven door and place potatoes in pan around chicken. Roll potatoes around a little so that juices coat potatoes. Spoon some juices over chicken. Close door and cook 1/2 hour longer. Open oven door and add carrots to pan once again rolling them around a little so that juices coat carrots. Spoon some juices over chicken. Cook 30 minutes longer. The chicken should be nicely browned. I like the chicken cooked until the drumstick moves easily. If you have a meat thermometer you want the breast meat at 170 and the thigh meat at 185.

I would also reccommend checking out a few cookbooks from the library. They have great ideas on menus, desserts, etc. You will quickly find one that suits your families tastes and comfort level! Fannie Farmer and Betty Crocker are both excellent.

CHICKEN ENCHILADAS IN SOUR CREAM SAUCE

One boned chicken, skinned, and diced

Here are a few of my favorite sites -- should keep you busy for a while. Look around at all the choices on the sites, not just the page that I bookmarked.

Busy Day Cobbler

1/3 cup butter
1 cup flour
1/3 cup sugar
2 tsp. baking powder
1/4 tsp. salt
2/3 cup milk
one large can sliced peaches with liquid
1/4 cup additional sugar
1 Tbsp cinnamon

Melt butter in 8 by 11 inch baking dish. In bowl combine flour, 1/3 cup sugar, baking powder, salt and milk. Pour over butter but do not stir. Over this pour sliced peaches (liquid included, but not all of it - I usually leave about 1 inch of liquid in the can, if you pour in all the liquid, it's too much)
Sprinkle peaches with additional sugar and cinnamon. Bake at 350 degrees for 45 minutes. Good served warm with ice cream.

Stir together remaining ½ cup granulated sugar, brown sugar and remaining ¼ cup cocoa; sprinkle mixture evenly over batter. Pour hot water slowly over top . Do not stir.
3. Bake 35 to 40 minutes or until center is almost set. Let stand 15 minutes; spoon into dessert dishes, spooning sauce from bottom of pan over top. Serve warm with ice cream.

In another bowl, cream butter, sugar, and vanilla until smooth and creamy. Beat in eggs one at a time. Add mashed bananas and beat until combined.
