Pickled peppers, as with fresh peppers, are a wonderful addition to all kinds of food. They're fat-free, low in calories, high in fiber and high in vitamin C. They add a LOT of flavor and go well in sandwiches, salads, appetizers, casseroles, scrambled eggs, you name it. (I'd leave them out of chocolate chip cookies and pancakes, though...)
Any kind of pickled peppers -- pepperoncini, golden Greek peppers, cherry peppers, roasted red peppers, those hot little yellow chiles, Hugnarian wax peppers, and anything else that's preserved in a bottle as opposed to being sold fresh -- may also be high in sodium, so if you are watching your salt intake, check the label.
Be careful -- the nutritional info on these things tends to be "per serving." And if the people who wrote the label think 1 pepper is 1 serving... multiply it by the number of peppers you actually eat.
For a real treat, try mixing in some chopped pepperoncini with onions and mushrooms, sauteed in butter, and then top a hamburger with the mix. Outstanding!
